My favorite pasta is very good. I love it. Here is the recipi for it.
INGREDIENTS
1 pound fettuccini pasta
1 1/2 cups butter, divided
1 pound skinless, boneless chicken breast halves - cut into cubes
2 (16 ounce) containers whole milk ricotta cheese
1 pint heavy cream
1 teaspoon salt
1 cup grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
Melt 2 tablespoons butter in a large skillet over medium heat. Saute chicken until no longer pink and juices run clear.
In a large saucepan combine ricotta cheese, cream, salt, Parmesan cheese and remaining butter. Cook over medium heat until well combined, about 10 minutes. Stir in cooked fettuccini and chicken; cook until heated through.

This is actually very easy to make...
My Homemade Spaghetti
1 jar of Prego sauce w/meat
1 Teaspoon Garlic Powder
2 lbs hamburg
2 tablespoons Worcestershire sauce
1 Teaspoon dried Parsley
1 can Beef broth
1 can of Hunt's Tomato Sauce
Pepper
1 or 2 packages of Ziti
Brown beef with Worcestershire sauce and a dash of pepper in medium skillet until browned. Transfer beef into a saucepan. Add Prego sauce, tomato sauce, garlic powder, parsley and beef broth. Stir and bring to a boil on medium heat. Cover, reduce heat and simmer for 30 minutes, stirring occasionally. Bring a pot of salted water to a boil and add ziti. Cook until tender. Add sauce and mix. Serve with Parmsesan Cheese. Enjoy!

I use rice pasta....it's better for you.
Dice finely 3 courgettes, large handful of mushrooms, red pepper, red onion and 5 cloves of garlic....fry in a wok and cook well.
Fry lean mince, adding the cooked veg, add tin of Napolina whole plum tomatoes and an Italian stock cube, a handfull of grated cheddar. Mix with the cooked pasta, place in an oven dish...sprinkle more grated cheddar and bake until the cheese melts....voila, the best pasta bake EVER! (Even my kids love it)!!!
Alternatively....cook a handfull of mushrooms, a red pepper, couple of courgettes and some cherry tomatoes...mix with cooked pasta, place in oven dish, cover with cheese and bake until the cheese melts......Love em both!
Serve both with homemade garlic bread...delish!

PASTA WITH SHRIMP SCAMPI
1-1/2 lbs. unpeeled, medium-size fresh shrimp
1-2 tbls. chopped chipotle pepper in adobo sauce
2 garlic cloves, minced
2 tbls. veg. or olive oil
1/2 cup dry white wine or chicken broth
1 tbls. prepared mustard
1 tbls. Worcestershire sauce
1/2-3/4 cup butter, melted
1/2 tsp. salt
2 tbls. fresh lemon juice
1 lb. spaghetti, cooked
1/2 cup fresh parsley, optional
1/2 cup shredded Parmesan cheese
Peel shrimp and devein. Saute peppers and garlic in hot oil in a large skillet over medium-high heat until throughly heated. Note: (you could and should slice open peppers to remove seeds to tone down the heat. Depending on pepper size, one large will do. You adjust to taste.)
Add shrimp and cook, stirring constantly, 2-3 minutes or just until shrimp turns pink. Remove shrimp and set aside.
Stir in white wine, mustard, and Worcestershire sauce, cook over high heat 3-4 minutes. Return shrimp to skillet. Stir in butter, salt, lemon juice, cook 1-2 minutes or until combined and throughly heated.
Place pasta in a large serving dish, toss with shrimp mixture and parsley. Sprinkle with parmesan cheese.
