I am not going to heat my kitchen so I want a chicken recipe, I have already made Chicken Enchildas, goulash, and grilled steaks this week. So nothing that really resembles those ideas please. Thanks!!

Cook the chicken, chop it, and return it to the crock with some BBQ sauce. After it cooks a couple hours, serve it on good rolls with some beans & coleslaw for sides.

Chicken legs are excellent in a crock pot, because the higher fat content prevents them from drying out during the long slow cooking process in a crock pot. Chicken breast, however, is quite the opposite. Since it is so lean, it becomes very dry and stringy during the long slow cooking process in a crock pot. Chicken breast is much better when cooked with quicker cooking methods, like broiling and sauteeing, where you can more easily check the meat so that it does not become overcooked. Once chicken breast does become overdone, the only remedy is to keep cooking it for even longer until it starts to fal apart, and serve it as shredded chicken. If you leave the crock pot on for at least 8 hours, the chicken breasts should become shreddable. Since crock pots cook so clowly, there's no need to marinate the meat. Just throw all your ingredients in there at once...the sauce has enough time to seep into the meat during the cooking process. Browning the chicken beforehand in a little bit of oil is optional, and can add some extra flavor, but definitely not necessary.

I've been making this with whole chicken for 30 years, but you could use just breasts, if you prefer.

One cup basmati rice (you can use regular rice if that's what you have)
One 12-ounce can of orange juice concentrate.
One cup Liebfraumilch (any cheap white wine will do)
One cup water.
One chicken, washed well.

Toss everything in before work, and turn it on low. When you get home, it'll be ready. If you have to work a few hours overtime, it'll still be good, and if you get off early, it will be OK, although I don't think the flavor is as good.

It'll need salt and pepper when it's done, but DO NOT add them at the start. I sometimes add a cup of frozen mixed vegetables at the start as well.

Crockpot chicken with mushrooms
6 and 1/4 hours/15min prep 4-6servings

1 tablespoon vegetable oil
1/4 cup finely chopped onions
1/4 cup finely chopped green peppers
1/4 cup finely chopped celery
1 lb skinless chicken breasts or skinless chicken thighs
1 package mushroom gravy mix
2 cans button mushrooms undrained
1 can evaporated milk

1. Heat oil over medium-high heat
2. Add onion, green pepper, and celery
3. Saute 2 minutes until vegetables are crisp tender
4. Add chicken and cook 6-7 minutes per side or until browned
5. Add to crockpot
6. Combine mushroom gravy mix and milk
7. Stir into chicken mixture in crockpot
8. Add mushrooms and liquid to crockpot
9. Set temperature to LOW and cook 4-6 hours, until chicken cooked through

Here's quick and easy. Dribble the chicken with lemon juice. Put an onion in the crockpot with the chicken and let it cook. This can be done with a whole chicken too. I'm sure other favorite seasonings could be used too.

Crockpot Brown Sugar Chicken

2 lbs boneless, chicken pieces (I use breasts)
1 c. packed brown sugar
2/3 c. vinegar
1/4 c. lemon lime soda (Sprite)
2-3 T. minced garlic (I used 3 cloves)
2 T. soy sauce
1 t. black pepper

Place chicken in Crockpot. Combine remaining ingredients, pour over chicken. Cover, cook on low for 6-8 hrs.

Serve over rice or noodles.

To thicken sauce, combine 1 1/2 T. cornstarch with 2 T. of water and add to the Crockpot, cook on high for 30 minutes longer.

Thai Chicken (Slow Cooker)

4 large chicken breasts, boneless/skinless
1 T. ginger
3 green onions, sliced
1 (14oz) can coconut milk
1/2 to 3/4 t. turmeric
1/4 to 1/2 t. crushed red pepper
1 (8oz) can pineapple chunks, drained (save the juice)
2 T. cornstarch
2 T. cold water (I used the juice from the pineapple)
Cooked rice
Chopped peanuts

Place chicken (season with salt & pepper) in crockpot and add ginger, green onions, coconut milk, turmeric & crushed red pepper. Cover & cook on low 5 to 6 hours, until chicken is very tender. Turn crockpot on high; add pineapple. In a small bowl mix cornstarch & water (pineapple juice); add to chicken mixture. Cook on high 15 to 30 minutes. Serve over rice and sprinkle with peanuts.

Crockpot Chicken and Rice
3 cans condensed cream of chicken soup
2 cups uncooked instant rice (i use sucess rice)
1 cup water
1 pound boneless skinless chicken breasts
or chicken breasts tenders
1/2 tsp salt
1/4 tsp. black pepper
1/4 tsp. paprika
1/2 c. diced celery
Combine soup, rice and water in crockpot. Add chicken;
sprinkle salt, pepper and paprika.
Sprinkle celery over chicken. Cover; cook on low 6 to 8 hours
or on high 3 to 4 hours.
* or use 2 cans cr.of chicken and 1 can cr. of celery
or 2 cans cr. of chicken and 1 can cr. of broccoli
and add pkg of broccoli to last hour of cooking

Heavenly Chicken Ala Mode
you will need: oregano, salt, pepper, diced chicken breast, white rice ( uncooked ), diced carrots and celery, lemon

1) put all these in croockpot except lemon
2) sqeeze lemon juice in and simmer until ready to eat

what about a chicken chilli..

or a shredded chicken.. this one is easy.. chicken mattering on family size.. 4-6 breasts.. two cups water.. start in the morning and will be ready by dinner.. add a can of cream of chicken/mushroom soup.. serve over toast or in a bun!
