I have two 12 Memphis Power Reference Subs, the RMS/Peak for each sub is RMS/Peak (w) 250/500. Will this amp be enough to run them smoothly?

Well, assuming the subs are 4ohm each, you could wire them in parallel to the amp (both sub +'s to amp +, both -'s to amp -) for a 2ohm load on the amp.
This will get about 300watts RMS from the amp. Each sub would get about 150watts RMS, so they will perform okay, but not to their full potential.
Set the gain correctly and you'll be good to go.

This will be okay, but you could get a bigger amp. A 500-600watt RMS mono 2ohm stable amp will power them much better. It will be louder, and much more clear.
Stay with names like Kicker, Alpine, or maybe even HiFonics for good bang for the buck amps.

If your two subs are 4-ohm single voice coil type, then the amp should be okay. It's rated for 300 watts at 2 ohms, so each sub would end up with 150 watts; less than their rated power, but enough to drive them effectively.

If the subs are 4-ohm dual voice coil, then the amp isn't a good match because you can't wire the subs for a 2-ohm load. In that case the amp will be limited to 150 watts for both subs.
