I gained weight just by eating more and being lazy. Admittedly, not all of it was healthy, but it helped. It helped me get to a healthy weight to help me get pregnant. (I was vegan, too)

eating more protein will put a few pounds on you quickly. i have gained 5 pounds in 2 weeks since i started eating more protein. im up to 225lbs.i eat 30 grams every 2-3 hours. you dont need to go that extreme my main goal is muscle. for your size i would suggest 100 grams of protein a day. protein shakes are great too. hope this helps.

Eat more protien! Protien aids muscle growth and is the main way meat causes you to gain weight. I would recommend a daily protien bar with some tofu/soy for dinner. Also, veggie burgers are packed with protien, so you might want to try that.
