If you are using extra lean ground beef, then perhaps you are getting too little fat in the mixture itself, which means it will cook drier. I'd suggest mixing your lean ground beef with ground turkey for a more robust flavor and texture. In your meatballs, add 2 eggs, diced onion, 1/2 cup Italian bread crumbs soaked in milk, as well as your spices and some Worcestershire sauce. I prefer to use Liptons Herb and Garlic dry soup mix myself. You can also add some unsweetened applesauce to the mix and they will turn out soft and juicy with a hint of sweetness. Good luck!

Are you making just meatballs with no sauce? I make mine with sauce. 1lb ground beef 1/2 lb turkey meat 1/3 c bread crumbs 2 eggs slighten beaten 1/ 3 tsp salt 1/3 tsp bk pepper 1/4tsp minced onions 1/4 Italian seasoning mix all ingredients in a bowl do not over mix form into balls and let rest for 15 in You can deep fry them for 10 minutes, drain and let rest Mushroom sauce 1 can mushroom soup 1 can mushroom pieces( drain and rinse) 1 tsp gravy master 1/3 tsp garlic powder 1/3 tsp onion powder 1/8 tsp season salt 1/3 tsp bk pepper mix with 1 cup of milk combine all wet ingredients stir well Place meatballs in dutch oven or pot pour sauce over meatballs, let simmer for atleast 15 minutes ( can add sour cream 1/4 cup at the last 5 min) Serve over rice or buttered noddles

Use 1 1/2 cups of breadcrumbs, and 1/2 cup of parmesan cheese along with the beef (use a mixture of beef and pork if possible) egg and onion.
Bake them, and then fry them over medium heat with just a little bit of extra virgin olive oil, they're perfect!

thats basically the stuff i use in meatballs, make sure you are not buying meat that is to lean, get the 20% fat ground beef. I use italian bread crumbs in meatballs , not burgers. Never have dry burgers or meatballs. I think your problem is with the meat selection, also add some italian sausage to your meatballs.

Are you using lean meat? That could be your problem. Also, most meatball recipes call for breadcrumbs. This actually helps make them moist by absorbing the fat and meat juices instead of letting them just cook off.

Breadcrumbs will actually keep them softer... It's just like meatloaf, only smaller versions. Also, you don't want to over cook them, especially if they are going to simmer in a tomato sauce. You only want to sear the outside and then let the simmering do the rest...

sounds to me like you may be overcooking them a bit. try making them larger or cooking them less or both. aim for a warm pink middle and when you remove them from the heat they will brown but not too much.
