I would recommend calphalon, Mauviel, All-Clad and Ruffoni for metal pots and pans.
Le Creuset makes cast-iron pots and pans that are coated in porcelain enamel so it absorbs heat slowly and spreads it steadily. These will probably give you the best heat control. These give you all the advantages of cast iron, but with easy cleaning and no need to season.
The Le Creuset pieces are EXCELLENT but very expensive (look at Williams Sonoma), but if you don't tell anyone, I'll let you in on a secret.... you can get pieces that are nearly as good for much cheaper at IKEA (yeah I know - you thought they just sold furniture). They don't have the variety of shapes and sizes, but the ones they do have work great!

le Creuset are the rolls royce of pans this is the only set you will ever need to buy there are lots of others go for a stainless steel pan with a copper bottom and riveted handles and a good guarantee keep to those 4 things and you will be OK

Personally I like Farberware pans for a good medium priced set of pans. I've had mine since 1975 and they're still great. In fact, my nephew just bought a set in July because he knew his parents, aunts and grandparents have always enjoyed the Farberware pans.

I got a set of calphalon for Christmas, and I absolutely LOVE them!!!
Even if you can only afford to buy one piece at a time, I highly recommend them. They're wonderfully easy to clean, they are well designes as far as handles go, and they have GLASS lids, so you can check the food without losing moisture or heat.

Calphalon, or Viking are good. My mom bought the Emeril pans. They are sweet! I wish I had some!
