Because most westeres cannot pronounce the ق Qaf in Arabic language [they can only pronounce it as the "k" sound] both spellings are used and are correct, but "Quran" is more common as it gives the idea to those who can pronounce it that it's the ق Qaf, not the "Kaf."

The Quran exists only in the Arabic in which it was revealed.
