Ask his mother or get a good healthy southern cook book. Many old recipes are being updated to eliminate a lot of fat and cholesterol.
The possibilities are endless depending on what his family was used to serving. My family didn't eat a lot of pork, for example, while some families I knew ate chitterlings, hog maws, pigs feet, etc. All of which I find disgusting, but to each his own. Don't assume that anything that involves pork, chicken, greens, fat back and cornbread is acceptable. It may not be. The person above me who said chicken, watermelon and black eyed peas was offensive. Don't make that mistake.
Ask your husband. Asking his mom would be even better as it might help you bond to share recipes. I'm sure the teasing was good natured and they would be horrified if they thought you took it to heart.
You'd be surprised to know that the Mexican diet is not all that dissimilar. Red beans and rice for example is a soul food staple. It is all in the seasonings!

Here is my favorite.
Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard or oil, lard will give the best flavor.
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels.
Do some fried Okra.
I make mine by cooking the Okra first and the rinse them. Dip in beating egg and fry in lard.
Black eyed peas.
For desert try a sweet potato pie. Same as pumpkin pie.
