My wife and didn't eat our wrapped wedding cake until about 10 years later and it was still good!!!
Always thaw something like this in the refrigerator first for around 24 hours (if you can let it thaw completely in the fridge then that is the best) and DON"T let it sit on the counter for very long (unless you want micro-organisms to enjoy it too).
It SHOULD still be good ... enjoy

I agree with the other woman. I would defrost it and feed it to the birds and buy a new cake. It's still the same cake and it's an anniversary and you can feel safer knowing your next cake is fresh and will taste better anyway. I suspect that if it is a fruit cake, it is probably quite safe to eat though, otherwise they wouldn't have been able to safely eat it back then but also back then, food was more scarce and probably not as nice either, so having a wedding cake to save probably helped you to have enough to eat for the next year. Nothing was wasted. People were much poorer back then. On the other hand, I don't know what kind of cake you have, so maybe it isn't, if it's not one of those really hardy sorts of cakes.

Take it out of the freezer and put it in the fridge a couple of days before you actually want to eat it. It should de-frost quite nicely and actually taste pretty good.
On a side note, my grandparents saved the cake from their 50th anniversary and tried to make us eat it on their 60th. My dad said it was okay, but I wasn't going anywhere near it. 10 years is just TOO long in the freezer!

I am a professional wedding cake artist. you don't have to let it thaw out in the fridge. it is totally acceptable to let it thaw out on the counter. it should taste perfectly fine, as long as you wrapped it in a layer of plastic wrap. enjoy, and congratulations on your anniversary! hope your cake was beautiful! ;-)

Personally I think cake is quite nice when it is still a little frozen. For sefetys sake do use the fridge. I hope it is wonderful!!!

My husband and I just celebrated our one year anniversary, too. I took the cake from the freezer and let it defrost in the refrigerator for two days. It had been wrapped in three layers of plastice wrap, two layers of aluminum foil and place in a freezer bag. It tasted fabulous! Enjoy.

let it thaw out in your fridge for a couple of days till the anniversary. I thought our cake would be nasty but it was just as fresh as the day it was made one year prior. i loved it...

you'll want to thaw it slowly. I recommend moving it from the freezer to the fridge for about 2 days, then to the counter for 1 day before you eat it.

Allow it to thaw out, and then consume! Just a warning, though - unless it was wrapped VERY carefully in several layers of plastic and aluminum foil, with the air all squeezed out, it will probably be really gross and freezer-burned.

We didn't do that, because my dad ate the top tier(long story, but it was for him). I've been told when it's been frozen a year, it's not good anymore.
