In The Next Generation, DS9 and Voyager, red was command, teal was medical or science and gold was security and engineering.

Depends on which generation you are refering to. In TOS (The Original Series) with Cpt. Kirk, Gold was Command, Blue was Science, and Red was Engineering. In TNG (The Next Generation) with Cpt Picard, Red meant Command, Blue meant Sciences, and Gold meant Engineering.

It depends, because they changed the colors from the original to the New generation.
In the original red was military/security, blue was science/medical and yellow had to do with running the ship (engineering, piloting, captain...)
