I have to throw my hat in the ring and give cave tubing in Belize two thumbs up also. It's worth every penny.
Cozumel is one of the best locations in the world for SCUBA diving. If you're not a scuba diver, but are interested, I suggest a resort dive in Cozumel. A resort dive includes a few hours of instruction followed by one or two highly supervised dives with a dive master. It's a great intro to SCUBA and you'll be hooked.

Belize is wonderful but I will say the city is very very poor so you have to book an excursion. You can't just walk around the city or you'll be miserable. I did a trip into the rainforest to Xunatunich, the Mayan ruins. It was amazing and it is one of the best preserved one there is.
If you've never seen a Mayan ruin, I'd say its a must do but if you have done that already, I don't know that I'd go back.
Also cave tubing was another excursion I really wanted to do and everyone who did that was going on and on about how great it was. Thats what I'm doing next time we go there.
Cozumel is probably my FAVORITE cruise ship port. No matter what I do there I love. My favorite thing is probably to go to the Chankanaab National Park and go snorkeling. It was great and in Cozumel, you really can just walk off the beach and go snorkeling. You don't have to do a shore excursion. There was also lots to do in the city. Lots of shopping, bars, I know a lot of people enjoyed the Party Bus excursion.
What appeals to you on the list of things though? Look through it and see what really jumps out. Part of the enjoyment of the cruise is the anticipation and the reading of the different things to do on the ship and list of excursions.
Edit: I personally hate the beach excursions. You pay so much and the boat is dropping you off on the island. You could lay out on the beach for free. The beach trips are a waste and always take you someplace that you pay for each thing (skiing, parasailing, snorkeling) so it's like paying twice for an excursion.

The thing about Belize is that it is an up and coming port! (one day it may be like Cozumel) There is not much to see at the port- Same ole vendors and poor people and conditions there. BUT the thing to do is to go to Ambergris Caye!!! THAT is beautiful, peaceful, relaxing- the best!!! I did a snorkeling excursion that ended with some time on Amb. and it was awesome! They make their own Belikin beer there that is very famous. Jerry Jeff Walker does 2 week-long (1 week each) concerts there each year. Awesome!! Super laid-back place.

I don't know what you like or how old you are but I was in those two cities last week and had a blast! In Cozumel we booked the Playa Mia Beach Resort Beach Break. You can take a cab $14 there and the excursion was like $29. It gets you open bar and non motorized water sports. We bought an hour on a waverunner for $110 and enjoyed that for a while. We then went swimming in their pool, enjoyed taking some pictures and then ordered some lunch which was $16. After lounging around for a while, we went to the bars, Carlos and Charlies, Margaritaville and Senor Frogs and had a great time there.
I didn't actually go into Belize City because our excursion didn't allow time for that. We got picked up by a private boat and they took us to Sun Break Beach resort. It was similar to Playa Mia but didn't include drinks or a pool. It was just a relaxing beach day. They had hammocks, umbrellas and abeautiful view. Both resorts waited hand and foot on you, you will almost feel guilty. Those are my recommendations, but have an awesome time!

Playa Mia was great. I was there last May with my father. Instead of booking through carnival, I asked around for others going there, are we shared a taxi. It was only a few dollars a person. Once we got to the beach, we just paid the beach admission for use of the water toys and drinks. We did the same taxi thing back to the boat.
Also, in mexico, you may want to consider the Zip lines. These are lines that go from tree to tree, and are supposed to be informational and really fun! But I don't think Carnival offers this as an excursion, but you can book it independently before you go.
If you like snorkeling, there is a snokel and stingray encounter in Belize. The snorkeling beach they took you to was supposed to be awesome, then you went to another area to swim with stingrays. Are you going on the Glory? Just curious, that is what we took last year. DONT FORGET THE SUNSCREEN!

I have been to Cozumel several times and really enjoy Chankanaab National Park. There is great scuba and snorkeling in the park on a man-made reef that attracts huge quantities of fish.
The park itself has all types of Mexican vegatation growing and lots of iguanas just walking around.
There are also refreshment stands for buying food and drink.
Personally, I prefer this to all-day drinking and loud water sports. But both are very popular.

Been to Cozumel and Belize for our first cruise. that's a great thank you to start up. That became 3 years in the past and we are reserving our third cruise this weekend. besides, as quickly as we went to Cozumel we took an expedition to Chankanaab Park to snorkel. Cozumel has absolutely beautiful beaches. I would plan on spending your day at one of them.
Belize has a fun tubing excursion that takes you into some caves and caverns. Fascinating!!
Both are beautiful stops, you'll enjoy no matter what you do.

If you like horseback riding then you might consider a horseback riding excursion while in Belize.
