I want to know if I should use , de, la, le, for the phrase, "a mixture of cooking". I believe melange is mixture, and cuisine is cooking.

Use "le melange" for "the mixture" , use "un melange" for "a mixture"...I believe melange is more akin to a "melding" as in a cross-cultural mixture of sorts.

If you mean by 'mixture' variety rather than loads of things put into a bown and mixed, you'd be better using an expression like 'une variété de cuisines.'

un mélange de cuisines. The word cuisines must be plural here as there are more than one cuisine in your mélange. Do not forget the accent aigu on the first e of mélange. Bon appétit!

It sounds right to me...It follows the same word structure as "fruits de mer" (seafood)...or better yet the term "Chef de Cuisine" (Executive Chef)

Cara de means face of. The way your friend is using the words "cara de" is not nice. For example, "cara de culo" literally means face of a butt, but in English you would say butt face.
