Not sure if you are in USA or Uk but you said £2000 so going to assume UK.
Unfortunately there are no charities that will help out for a bill that size, it's beyond their means.
It maybe worth approaching RSPCA, PDSA or Dogs trust but in all honesty I wouldn't hold your breath.
If you have been referred to a specialist they are very upfront about payment being made at once and generally do not accept any payment methods, but you can only ask.
This is where insurance is invaluable as then you wouldn't have to be worrying about it.
Have your tried friends, family or bank?
Maybe even have a shop around and see if you can get the op done cheaper anywhere else.

What kind of operation? What's the cost??
You may want to travel a little. I traveled three hours to St. Louis, MO for my dog to have an operation. Had a stayed locally I would have paid half the price. Of course this was a serious operation and I wanted the best vets out there.
I'm sure your vet will set up monthly payments. Have you asked??

Apply for Care Credit as someone above mentioned, or ask your vet if they'll accept payments or use your credit cards. Borrow the money from a family member or friend. Or is there an alternate treatment that has alternate costs than the 2000 pounds.

Friends, family, a signature loan fom the bank.
An extra job, a pay advance, take your vacation pay in lieu of time off.
I don't know what your business is, but maybe you can trade some labour or product with the vet, or some other person who needs your goods or services and then they can pay the vet.
The breeder; or if you got it from a rescue organization then maybe they can arrange some deal on your behalf with your vet, or another vet they have a relationship with.
Run a dart tournament or a snooker tournament (don't forget to pay the taxes).
Have a yard sell, mow some lawns, haul some rubbish, sell some stuff on eBay.
In other words, organize yourself and you won't need an organization.

All you're able to do is attempt babysitting, washing autos and stuff like that. Ask the vet in case you ought to artwork there cleansing the area, feeding the animals and the rest and placed your hard artwork to paying off the bill.
