operational amplifiers were invented to make mathematical operations (sum, rest, multiply, derivate, integration and so on) with electrical signal. This allow to build the called "analog computer" which was used a lot before the digital computer (your pc). the main use of the analog computer was to simulate physical systems like rocket, cars, and so on, so that you can see the behavior of the system without the need of actually building it. With the digital computer you can do the same simulations easier.
operational amplifier keep being a very useful electronic device because it is a very flexible device. the flexibility of opamp is due to that the function of the opamp depends of the external component you use with it (resistors capacitors), and not of the opams itselt. so you can do with the same opamp many different thing: amplifiers, oscilators, mathematical computations, comparators, interfaces, and so on.

I use them for making amplfiers for instrumentation for launch vehicle (rocket) and satellite telemetry (they amplify signals from guages, like pressure gauges, temperature gauges, etc).
They are used in guitar amplifiers, hi-fi amplifiers, and guitar effects boxes (usually in the preamplifier stages).
They are used in cell phones, I-Pods, portable phones, TVs, just about all consumer electronics with any kind of audio output, or where filtering is needed (because Op Amps are used in active filters, too).
