For the seasonings....I use Old Bay Seasoning, or Carribean Jerk seasoning, or just plain ole cracked black pepper and lemons and bay leaves salt. All these seasonings are great for cooking seafood...I hope this helps.

I think your confusion comes from how they do things in Maryland. There they steam the crabs (not boiled!), layer them with Old Bay Seasoning and them leave them in a closed container for about 20 minutes. But crabs are like a snack in Maryland - you buy a couple of dozen crabs and get some beers and crack crabs on the back porch. The seasoning gets on your hands as you are eating so your crabs are really well seasoned. If you decide to boil (not steam) your crabs, then the seasoning should go into the water and the crab meat will be infused with the seasoning. So the rules would be - for boiled crab season the water, for steamed crab season the crab.

boil in seasoned water.
Ingredients:
kettle
water
4 tbsp. Liquid crab boil
½ cup salt
½ cup vinegar
4 dozen beautiful, live, Louisiana blue crabs
Serves: 4
In your kettle, pour water, add crab boil, salt & vinegar and bring to a rolling boil. Add crabs. Bring to a rolling boil again and boil for 15 minutes. Turn off burner and allow to sit for 5 minutes. Remove crabs (remove basket or strainer), serve on trays, a dozen/tray. Traditionally, boiled crabs are eaten on picnic tables covered with newspaper.

i add all my ingredients to the water, bring it to a boil, then steam the crabs for 20 minutes. this way the meat doesn't get as mushy as boiling them sometimes does.
