Ham and Potato-Cheese Casserole is easy and delicious!
Slice potatoes in rounds and boil until fork tender. Season with salt and pepper or your favorite seasoning product.
In a casserole dish layer potato slices with cream of mushroom soup, ham, and cheese.
Bake at 375 till bubbly.

Quiche :
6 eggs
ham (however much you want usually about a cup will do)
1 bag =2 cps shredded Cheddar cheese
2 frozen (plain) pie shells
chopped onions (if you like em)

In a large bowl crack open all six eggs and beat them with a fork (like you would for scrambled eggs). Then throw in the cheese, saving about 1/2 a cup back), and the ham and onions. Mix it all up pour into the two pie shells.
Bake in the oven for about 20-30 minutes at 425 degrees. It's done when the eggs have firmed up . When you take them out, sprinkle the left over cheese on top. Cut like a pie and eat. Sometimes we have ketchup on the side......lol it's good. You could also throw in some broccoli.

Crock Pot Scalloped Potatoes and Ham Recipe
Servings: 5 servings


Ingredients


6 medium size potatoes peeled and sliced 1 1/2 cup shredded cheddar cheese
1 can (10 3/4) cream of onion soup 1/2 cup milk
1 lb. ham sliced (cut into strips)

Instructions

Combine potatoes, cheese and ham in crock pot. In a small bowl, stir
together soup and milk. Pour over potatoes and ham mixture. Cover pot;
cook on medium for 4 ½ - 5 hours or until potatoes are tender.

STROMBOLI

1 loaf frozen white bread dough
1/4 lb. sliced pepperoni
Chopped or sliced sweet or hot peppers
Chopped or sliced onions
2 1/4 inch slices mozzarella cheese
1 egg
1/2 lb. sliced thin cooked ham

1. Thaw dough at room temperature.
2. Roll out dough to size of small pizza (10 to 12 inches round) not too thin.
3. Beat egg in small bowl. Brush egg on dough and spread around covering completely.
4. Next layer cheese, then pepper and onions.
5. Layer pepperoni and ham.
6. Fold left side to center of dough.
7. Then fold right side over left side.
8. Seal open dough underneath. Pinch ends under.
9. Bake on cookie sheet at 350 degrees for 1/2 hour.
10. Cool 30 minutes.

SCALLOPED POTATOES AND HAM

3 c. sliced potatoes
1/2 c. thinly sliced onion
1 can cream of celery soup
2/3 soup can of milk
1 tsp. salt
1/4 tsp. pepper
2 c. diced ham (or leave out salt & use a can of Spam)
Grated cheddar cheese

Place potatoes, onions and ham in baking dish. Mix soup, milk, salt and pepper. Pour over potato mixture. Bake 1 hour at 375 degrees, covered. Remove from oven and sprinkle with cheese and bake 15 minutes longer, uncovered. For plain scalloped potatoes, leave out ham and add extra potatoes.


HAM & BROCCOLI CASSEROLE

1 (20 oz.) pkg. frozen cut broccoli
1/2 c. chopped onion
2 tbsp. butter
1 can cream of mushroom soup
1 can cream of celery soup
1 soup can milk
1 c. shredded Cheddar cheese
3 c. cooked cubed ham
2 c. raw quick rice
1 tsp. Worcestershire

Cook frozen broccoli according to package directions, but a few minutes less than indicated. Drain and set aside. Saute onion in butter and set aside.
In a large bowl, combine soups, milk and cheese. Into this mixture, stir the cooked broccoli, sauteed onion, ham, rice (raw) and Worcestershire. Spoon mixture into a 2 quart casserole and bake at 350 degrees for 45-50 minutes.

FRIED RICE WITH HAM
INGREDIENTS
2 eggs, lightly beaten
1 1/2 teaspoons canola oil or vegetable oil
3/4 cup cold cooked rice
2/3 cup diced fully cooked ham
3/4 teaspoon garlic powder
1/4 teaspoon ground ginger
Dash pepper
1 dash chili powder
1 1/2 teaspoons soy sauce
DIRECTIONS
In a small skillet, cook and stir eggs in oil over medium heat until eggs are completely set. Remove and set aside. In same skillet, cook the rice, ham, garlic powder, ginger, pepper and chili powder if desired until heated through. Stir in soy sauce and reserved eggs. Serve immediately.

Ham salad is great for lunch or dinner. Just throw the left over ham into a food processor with some mayo and dill pickles. Do not over-process or you will just have mush, pulse it to desired chunkiness and put in your favorite bread or roll.

HAM SALAD

2 lbs. ham
6 hard boiled eggs, chopped
2 (8 oz.) pkgs. cream cheese
1/2 c. mayonnaise
1 tsp. sugar
Chopped celery, green pepper or pickle relish (opt.)

Whip softened cream cheese with mayo and sugar. Put ham through food chopper or processor. Mix eggs and ham. Mix in cheese mixture. Refrigerate. Best to mix at least 10 to 12 hours before serving.

Use to make ham salad sandwiches with sliced tomato & lettuce on toasted bread, croissants, rolls etc...

A ham and egg omelette or "tortilla", or add the ham to a bean soup and serve with toasted sandwiches. Or, buy some diced potatoes, add onion and green pepper and saute in a skillet for a hash. Serve with a fried egg.

Broccoli and ham casserole is nummy!

1 package frozen broccoli, 10 ounces or about 1 1/2 cups chopped
4 slices cooked ham
1/2 cup shredded cheddar cheese
2 cups white sauce, recipe below
2 teaspoons dry mustard
1/2 teaspoon salt
dash pepper
1 tablespoon minced onion

Cook broccoli until almost tender; place in buttered casserole. Top with sliced ham. Make white sauce and add cheese to thickened sauce; cook over low heat until cheese has melted. Add remaining ingredients to the sauce; pour over ham and broccoli.

Bake casserole at 400° for 20 to 25 minutes.

White sauce:
4 tablespoons butter
4 tablespoons flour
2 cups milk
salt
white or black pepper

Melt butter in a saucepan over low heat; stir in flour. Stir and cook for about 2 minutes. Do not brown. Gradually stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken.
