Fresh mayonnaise - delicious!:
(I use uncracked, vegetarian-produced eggs to help avoid salmonella - there are pasturized raw eggs you can use, too)
1 raw egg
1 teaspoon Dijon mustard
1 teaspoon vinegar, preferably wine vinegar
1 teaspoon lemon juice
Can sub. vinegar for lemon juice or vice versa - same acidity
1/2 teaspoon salt
3 tablespoons quality vegie oil preferred (I use grapeseed)
1 to 1 1/2 cups of plain flavored vegie oil (like canola)
Blend for 8 seconds until it becomes emulsified, then pour from 1 - 1 1/2 cups of other oil in the plunger to drip. If you don't have a drip plunger, trickle it in VERY slowly while the blade turns. When done, scrape the sides and blend in. Season any way you like. Keep refrigerated. Lasts about a month.

Another favorite is ham/cheddar cheese/pineapple blended together. It makes a GREAT sandwich spread or salad topping, and you can use some of the pineapple juice instead of mayo to keep calories lower.

With a slicing blade, I make cabbage slaw. With a shredding blade, I make grated cheese - best when the cheese is really cold.

I use mine for all sorts of things. It has a slicing and shredding blade, so that makes it even more versatile.

I use it for slicing onions, potatoes, and cheese. It takes the tears out of making French Onion soup! I use it for shredding cheese, potatoes and other things. I use it for making bread crumbs. For chopping a lot of things. It's great for making sauces. When my kids were babies, I made their baby food in my food processor.

I use it to chop meat for these salad sandwiches.


LEFTOVER ROAST BEEF SALAD

1 c. finely chopped roast beef
1/2 c. diced celery
1 green onion, minced
1/4 to 1/2 c. diced Cheddar, Swiss or Monterey Jack cheese
1/4 c. mayonnaise
2 tsp. sweet pickle relish or 1 sm. dill pickle, finely chopped
1/2 tsp. prepared horseradish (optional)
2 tbsp. catsup
1/4 tsp. salt
Few grains pepper

Mix all ingredients together. Serve on lettuce leaf or between bread slices.

BOLOGNA SALAD SPREAD

1/3 c. finely chopped bologna
1 hard-cooked egg, chopped
2 tbsp. salad dressing
1 1/2 tbsp. minced green pepper
1/8 tsp. celery seed
Pinch of salt

Combine bologna, egg, salad dressing, minced green pepper, celery seed and salt. Mix well. Yield: 1/2 cup

I make a great pesto type dish
1 jar sun dried tomatoes in oil
1 cup fresh basil
1 garlic clove
Wizz this all together and toss with pasta mmmm

Most often I use it for making dough to make tortillas. I also use it to shred blocks of cheese, make hummus, pesto, and homemade bread crumbs. It's so versatile!
