My family is coming, no one is picky. Well, except me (giggle). I follow a low carb diet. There will be more people than I've seats at the table. Not a problem for my casual clan, but I chose the casserole since will be easy to eat while holding a plate lounging on the couch or easy chair.

Low carb options preferred but any suggestion greatly appreciated.

I made something similar to this the other day for a family whose daughter came home from surgery. For the side dishes I did broccoli and cauliflower and watermelon. They told me everything was delish.

Spinach or some kind of greens either cooked or in a salad. You could serve a garlic toast for those not on low carb diets. For desert, a nice fruit pie is in order. A good drink for alfredo and chicken is 100 % cranberry juice or cran/raspberry with a sharp lemon lime soda, like sierra mist or plain 7-up, added just before serving. It bites back a little but is a compliment to your main coarse. (Spinach salad would be a great side!)

A casserole is your protein and carb in one, so you don't need much more than that. You can't go wrong with a tossed salad before, and dessert after. I've never heard of alfredo with bacon, have you tried it before? I'm a picky eater too, that was my polite way of asking do you think they would be good together.

if you want to get fancy, try this recipe for brussels sprouts which everybody likes, even people who hate brussels sprouts. First, peel the outer layer off, and make two cuts in each stalk, like a cross or an X. Then put them in a bowl, sprinkle with salt and cover with water. Weigh them down (they float) with a plate so they soak in the salt water. This kills off any critters which might be lurking. Do that for about 20 minutes. Then drain & rinse & dry them off. Melt 1/4 cup butter in a saucepan. Add the prepared brussels sprouts and toss - then sprinkle liberally with white wine. Add some chopped nuts (any will do) but the best, is chopped roasted chestnuts. Toss all around and then cover, and simmer until the brussels are tender. It's really delicious and it will impress.

Well, a casserole is perfect for that really, and one benefit is that it's a one dish meal. You don't need too many sides or anything. . .I would have some fresh salad, and nice bread. . . .then give people completely different options. Go for a fruit salad, some appetizers and things to munch on (chips and dips or a fruit tray while you're all just hanging out is great), and then some desserts.

I would say something simple because your main dish has many flavors. If your looking low carb, fresh steamed vegetables, cut in large bite sizes for your couch guests. (broccoli, cauliflower, carrots, lightly seasoned) If you want to cheat a little on the carbs but still go healthy side, whole grain (cold) rice salad (uncle Ben's, mixed with olives, green onions, raisins, cilantro, toasted almonds, oil and lemon juice) goes great with chicken.

serve a salad before and garlic bread or breadsticks with it.
Any italin dish, especially an alfredo, are great with garlic.
And you already have your veggies so you dont need to worry about including them in the side.
I would go easy if you include desert. Alfredo is such a heavy dish you'll be very full after.

To balance out the heaviness of the casserole I would suggest a fruit salad and asparagus or green beans

how about a beautiful greek salad with olives [pitted of course] feta cheese, baby tomatoes, iceburg lettuce [broken into bite size] blanched green beans cut into bite size, a nice dressing with olive oil, balsamic vinegar, garlic crushed
that should do it and you can make it according to the number of friends you are inviting. Just remember not to put the dressing onto the salad until you are serving it otherwise it will go limp

Slice up different types and colors of tomato. Arrange them on a plate (single serving for each). Sprinkle with good olive oil and add some goat cheese or feta cheese (if you want). Sprinkle with sea salt and pepper and VOILA!! A delicious, tasty, colorful salad for you and your family. You could even throw in some whole black olives. Remember, you can change this any way you like to fit your dietary needs.
