Such as dietary laws, or laws on cleanliness or that women have to stay outside during menstruation...

They seem to ignore this book otherwise!

Actually most Christians do not quote Leviticus unless asked for a specific Biblical law against homosexuality, in which case the answer would be Leviticus.

Most Christians quote Paul's comments in the New Testament when when talking about how appropriate homosexuality is.

Because if something wasn't changed in the New Testament then the Old Testament still applies. And people use the New Testament to quote about homosexuality.

Very good question. They, i.e. most Christians use the Bible like a Buffet dinner, they just pick and choose what is most comfortable to them.
Fact is, Dietary laws and homosexuality is dealt with in the New Covenant as well, they just misinterpret the verses to their own hurt. And while doing so, lead others astray.

I don't quote Leviticus. I always quote from the New Testament.

1 Corinthians 6:9 -- 9Do you not know that the wicked will not inherit the kingdom of God? Do not be deceived: Neither the sexually immoral nor idolaters nor adulterers nor male prostitutes nor homosexual offenders 10nor thieves nor the greedy nor drunkards nor slanderers nor swindlers will inherit the kingdom of God.

Romans 1:24-27 -- 24Therefore God gave them over in the sinful desires of their hearts to sexual impurity for the degrading of their bodies with one another. 25They exchanged the truth of God for a lie, and worshiped and served created things rather than the Creator—who is forever praised. Amen.
26Because of this, God gave them over to shameful lusts. Even their women exchanged natural relations for unnatural ones. 27In the same way the men also abandoned natural relations with women and were inflamed with lust for one another. Men committed indecent acts with other men, and received in themselves the due penalty for their perversion.

One of the great mysteries of the Universe. I don't think I've ever seen a Christian answer this question. They just dodge it.

My guess would be that they just ignore the parts of the bible they find inconvenient.

Cherry pick the religion since they worship their desires and not the Lord of Abraham.

If they choose one law then they HAVE TO choose them all otherwise they are only following their desires.

because for that type of fundamentalist, it's more important to vent their fear and anger than it is to understand how nature actually works. because the idea that the world can't be fully defined by their scripture scares them more than anything else. because they're so scared of hell that they can't tolerate the happiness of others.

A la carte biblical scholars. I kick my wife out when she is menstruating, and I have no problem with homosexuality.
