Depends on the year you're talking about. The SE was the lower-level trim and the GT was the upper-level trim, so in general the GT is better equipped. However, many options and even the engine choices overlapped between the two, so no one can say for certain what the differences would be between any two particular models without seeing the car or the window sticker describing all the options.
From Wikipedia, the 1999-2005 Grand Am came in these trims:
"This generation of the Grand Am was sold in five variants, the SE, SE1, SE2, GT, and GT1. Each variant added various features such as power windows and locks, dual rear exhausts, a rear spoiler, a more powerful engine (3.4 L V6) than the Ecotec, or alloy wheels. Safety features such as dual front airbags and anti-lock brakes were now standard throughout the line, as well as traction control (ETS). However ABS and ETS (Traction Control) were optional on the 2003 to 2005 Grand Am SE, but standard on SE1, SE2, GT and GT1 models."

The GT stands fro Grand Sport and is usually more sporty. I think the GT is the 2 dorr and the SE was the sedan.

front bumper and hood gt usually has ram air gt is just looks more sporty.

basicly the only difference is the engine
both come in 2 or 4 door and neither one is really that fast
