Where do you live?
Florida waters give you many places to fish for them if you live there.
Hammerheads, mako, dusky, blacktip, lemon, thresher, nurse and so on for good eating but I have to agree I have not eaten a good tasting blue!

There are sharks in all oceans, so I'd guess you could find shark charters almost anywhere. I know there are plenty of people who fish for them off southern California, and enough around that hooking them "incidentally" isn't rare.

Shark meat varies. Some species, like thresher and mako, are good eating (and in years past their meat was actually sold as swordfish); others like blue shark, are crap.

Personal experience: a few years ago on a tuna charter, a smallish 40-lb blue shark ate a Rapala another passenger was trolling. With both big trebles embedded in its mouth, there was no way we could release it and it would survive. So, following the accepted "wisdom" the deckhand cut its head off and gutted the shark immediately, then cut the flesh into steaks and put them on ice. We tried it for dinner that night (broiled). Sort of a cross of shoe leather and jello in consistency, and it tasted like mud. On the other hand, I've also eaten thresher and mako, and both were good.

In general, it's best to release sharks, as they are slow to mature and have a low reproduction rate. The good-eating ones have been harvested commercially for years, and are seriously depleted.

Hear in northern california we catch alot of leopard sharks wich are ok eating, I dont keep em anymore because last one i kept, i cut it open and about 8 live baby sharks came out. The one that I find is really good eating is a 7 gill shark and they get pretty big, i caught a five footer about two years ago, not a good fight but good eating. Thresher is pretty good eating but it can dry out on you easy so dont over cook it.

Mako and Thresher sharks are good eating, especially Mako. It tastes like swordfish. As far as blue sharks, can't eat them. On Long Island best place to shark fish is Montauk in June and early July.

in florida or any where else look for grass flats close to deep water or ship chanels the larger sharks patrol the edges looking for fish comeing off of the flats ocassionaly they venture on to them. on a recent trip three bull sharks corraled a school of mullet on the flats and cut them to pieces it was a site to see. and yes shark is excellent table fare. the key is to keek them iced and clean them as soon as possible you do need to keep them whole until you get home most state officers want to be able to identify your catch.
