If you mean the portion of the phrase, "Jiminy Cricket" or "Jiminy Christmas", these are just "sanitized" versions of "Jesus Christ", used as a swear word.

'Jiminy!' or 'Jiminy Cricket' is a euphemism for the expletive Jesus Christ, said by people who want to avoid blaspheming.

I don't know what context you're hearing it in but there used to be a character called "jiminy cricket" I think in a cartoon, and people would sa "by jiminy" when they were surprised or "Jiminy cricket'
