i love to catch them but i would never eat one,but the best to eat would be the speckled perch,we call them crappy.

I really love Red Snapper myself followed closely by Stripped Bass (Rock fish), and Grouper. Each one broiled with butter and Parsley (Yeah I'm gonna hear grief about the Butter.But I don't care!)
or fillet's of any one of these with a homemade Beer batter dipped coating and deep fried for just a few minutes! Thanks a lot.......Now I'm hungry................lol

Hands down the best is Halibut Cheeks.
Unfortunately no sold in Georgia, so just halibut is second and Grouper is next for me, then shark.

For white-meat fish, halibut is my favorite. For darker meat fish, fresh albacore is hard to beat. But there are so many different fish with so many different tastes and textures that my favorite varies from day to day. Rockfish, bass, yellowtail, salmon, wahoo, tuna...
The key of course, is getting it fresh.
