Because, God used the dust to make man. He gathered some dust and formed man. Now, I think that you are trying to make a point come across to the christians that think monkey's should be gone.
However, if God created us out of the dust then we did not evolve from the dust and even though the monkeys argument is wrong and false, this in no way relates to the same point that those people think they are making.

In Iraq there is nothing but dust everywhere, I guess God only needed to use a little bit of dust and not all of the dust. I think the dust is still here to cover the craddle of civilization maybe. In fact I am covered in that dust right now along with everything else, it gets everywhere. Just a thought.

Well, maybe God didn't use all of the dust to make man and woman. He obviously saw that dust serves another purpose, and so left some on the earth. Ultimately we cannot expect to get a clear-cut reason for the actions of God.

Well, it doesn't say he used ALL the dust in the world. So, if you have 10 lbs of flour - you could make a lot of bread and still have flour left over. Just like glass is made out of sand - but there's still a lot of sand out there.
Also, theres a quote in the Bible about dust to dust - so even if man is made from dust - he goes back to dust and therefore there is no net loss of dust.

Because the story of god is fiction. Furthermore, if I were to see it from the xtian point of view, it says that in Genesis 2:7 that god formed man from the dust of the ground. It clearly does not say "all" of the dust, but that man came from the dust. If I say my desk was made from wood, would you think that I meant all of the wood on the Earth? Or just enough mass to match that of a medium sized desk.
