If he is truly inept in the kitchen, freezing meals is a good idea. However, I have found that the biggest problem with inexperienced cooks is not knowing how to plan a meal.
In the residential facility I managed, I would create a menu for each meal on a calendar and group all ingredients for each meal together, by taping off sections on the shelves of our pantry and labeling frozen or refrigerated items by date and meal. You should also have it broken down into the exact portions they are to use as well.
As long as the meals to be prepared are not too complicated ot extravagant, he and the kids (if they are old enough to help) can put it all together relatively easily. Be sure to attach a small card with simple directions. I would also always have a few emergency backup quick meals (or premade / frozen) just in case.
Good luck.

Taco Soup
1 Pound Hamburger (Minced Beef)– Browned & Drained
1 Pack Taco Seasoning
1 Can Ro-tel Tomatoes (has jalapeno in it)
(can is the size of a Campbell’s soup can)
1 Can Dark Red Kidney Beans
1 Can Corn – Whole Kernel
1 Can of Water
Mix together & cook until it looks/smells done - although everything is already cooked - so you COULD eat it as soon as it gets hot. You can also put it in a crockpot/slow cooker.
(After you make it with the recipe one time to see what it is like - the next time you can also add carrots, peas, white beans, pinto beans, potatoes - just any vegetable you like best.)
After you put it in your bowl – taste it, it is great that way and less fattening – then put a big blob of sour cream in it and mix it up – then taste it again.
Garnish with black olives, cheese, onions, chives – whatever makes you happy.
I multiply the recipe (using less meat and more corn - just a personal preference) and freeze containers of it to pop in the microwave to thaw and heat later.

These recipes bake and freeze really well:
*******Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.
************Quick and easy Lasagna
2 containers (15 oz.ea) ricotta cheese
2 cups shredded mozzarella cheese (about 8 oz.)
½ cup grated Parmesan Cheese
2 eggs
2 jars (1lb. 10oz each) Ragu Old World Style
12 uncooked lasagna noodles
1. Preheat oven to 375. In bowl, combine ricotta cheese, 1 cup mozzarella cheese, ¼ cup Parmesan cheese and eggs.
2. In 13x9 inch baking dish, spread 1 cup pasta sauce. Layer 4 uncooked noodles, then 1 cup pasta sauce and ½ of the ricotta cheese mixture; repeat. Top with remaining 4 uncooked noodles and 2 cups pasta sauce.
3. Cover tightly with aluminum foil and bake 1 hour. Remove foil and sprinkle with remaining cheeses. Bake uncovered an additional 10 minutes. Let stand 10 minutes before serving. Serve with remaining pasta sauce, heated.
* or use 1 jar (2 lbs. 13 oz..) Ragu Old World Style Pasta Sauce.
VARIATION: For a twist on classic……. Add 1 lb. ground beef, cooked, to Pasta Sauce.
NOTE: Recipe can be halved. Bake in an 11x7 inch baking dish 1 hour. Continue as above, omitting last 10 minutes of baking.

My suggestion would be teach him how to cook little things. My fav quick and easy meal as a kid was tuna fish cassorle. Meatloaf is also a very thing to make and the leftovers make a nice sandwitch for lunch.

( I fix this dish the next day, when we have left over Noodles, Rice or Potatos )
Your husband knows how to fix potatos, noodles or rice, right?
You can fry them in a regular pan, add cut onions, hot Dogs or left over sausage, after it all is heated or even a little brown, add one or two eggs to it all.
Flip or stir till eggs not runny anymore and enjoy.
Kids love it with Ketchup
PS: season as needed with Salt, Pepper or chives ... whatever you like

You should make a big lasagne or two, that will cover some days. I'm sure he can manage a salad or two as well. They could have a BBQ some day if it was nice and that's pretty simple too. There are some cool pasta recipes here that only take a few minutes to cook up
