In order to start a vineyard, you must know what type of grapes are you going to use, what type of soil is needed and a formidable climate for the grapes. For your info, There are more than hundred types of grapes. The soil must not be saturated in order for the grapes to be concentated preferably needs a rocky soil. lastly, There is a course to guide you regrading your question which is Oenology(Wine Science)

to add to the good suggestions already given...
see if you can meet with a vineyard near you and spend the day with the owner and have them walk you thru it all.
i know i had seen a special on tv, food network, about it. it takes a few years for the vines to mature i think...
maybe hit up the library for info about it... but deff hang at a vineyard. you might be able to score contacts for bottles, label makers, barrels, etc

Property an acre or more How big do you want to get.
the library has it all.
the web has a million.
I am sure a nursery will have the info and books and plants.
BTW it is not cheep.

Contact any wine growers association. Also you will need lots of money, be ready to install an industrial quality irrigation system, prepare for the proclivity of weather, pest damage, labor pool...and to be disappointed. Nice dream, good luck.
