1-1/2 lbs. potatoes
3-1/3 cups iced water
3/4 tsp. onion powder
3/4 tsp. garlic powder
3/4 tsp. ground white pepper
3/4 tsp. red pepper flakes
1/4 tsp. ground allspice
1/4 tsp. salt
2-1/2 tsp. vegetable oil
aluminum foil
Wash and cut potatoes into 1/2 inch French fry-size strips. Place strips in bowl of ice water, cover, and chill for 60 minutes. Remove and dry. In a large plastic bag, combine next 6 ingredients. Add potato strips, close, and shake until coated. Place potato strips evenly on a cookie sheet or shallow baking pan greased with vegetable oil. Cover with aluminum foil and bake at 475°F for 15 minutes. Remove foil and continue baking, uncovered, for an additional 15 to 20 minutes, or until golden brown. Turn potato strips occasionally to brown evenly.

This is the way I make REAL frites. Fluffy on the inside and super crispy on the outside. I got this recipe from the America's Test Kitchen and is much faster than parboiling or soaking the potatoes.
Cut potatoes ( I use russet baking potatoes) into wide "shoestrings" with a good knife.
Coat with vegetable oil and microwave for about 2 minutes until they bend easily without breaking. Rinse in a collander over cold water. Pat very dry with tea towel.
Fry in at least 3" vegetable oil at 325 for about 3 minutes. Drain on a paper towels or brown bags. Turn up the heat to 375 and return fries to oil and fry until golden.

Fresh cut fries are the best but also take the most time to prepare. Large white potatoes are probably the best choice for slicing. While you can cook the fries in canola or vegetable oil, try peanut oil if you are not allergic. It imparts a nice flavor to the potatoes. Do not overload your frypan when doing as the sogginess comes from the temperature drop. You want to crisp the outside first, then the moisture from the inside boils out and is not replaced by the oil.

Simple fries are with sliced potatoes, but there is a better way.
There was a place I used to go to in Germany that would mash the potatoes first, run them through some kind of grinder thing where they came out in fry-shaped strips, and fry those.
Much better fries than simply slicing.

How to make french fries:
Cut the potatoes into strips of about 1/3 to 1/2-inch thickness and width
Soak potatoes in ice cold water for 1 hour at room temperature. Drain well; pat dry with paper towels.
Heat oil in deep fryer to about 375°.
Place potato strips in a single layer in deep fry basket; fry in hot oil for about 4 minutes, or until golden brown and tender.
Drain the homemade french fries on paper towels then keep warm in the oven while frying remaining batches.

the way i make my homemade frieds is
i chop up the potatoe in to the size of fries, i like mine thick, so i make them nice and thick
then a put them into the fryer with fresh peanut oil
fry them until they are golden brown
and as soon as they come out of they fryer i throw them on a cookie sheet with paper towles on it and put sea salt on them
they taste really good if you put vinger on them, or you can always use ketchup

uhhhhh.....how about peeling and cutting up your potatoes and then frying them in your choice of oil or grease.
By the way, french fries are not from France.
