Boneless/skinless chicken breast are easy and have lots of uses.
1. Heat some olive oil and garlic in a skillet (either mince up fresh garlic or use garlic powder or salt) dice up the chicken and put in. IN the meantime prepare some al dent (slightly firm) pasta, when the pink is gone from the chicken add in the drained pasta, toss and heat through. You can add mushrooms and any veggies you like. You can add a jar of Al Fredo sauce, if you like.
2. Cook up the diced chicken, when pink is gone, drain it and return to skillet and add a packet or two of fajita or taco seasoning, toss through and heat through. Serve on tortillas with your favorite toppings.
3. You can cook the breast up whole, either grill and start basting with your favorite BBQ sauce, serve with baked taters and corn on the cob. You can cook these in a skillet too if you don't want to grill, when the pink starts to disappear start coating with BBQ sauce and turn and do the other side.
Ground beef
1. Always easy to do taco, just cook up, drain and add an envelope or two of seasoning. Serve on soft or hard shells. With soft shells I like to sometimes take a skillet, add a touch of oil and cook the plain toritlla a bit on each side, gets it nice and crunchy.
2. Taverns or loosemeats are easy. Cook up the burger, drain, add salt and pepper, ketchup, mustard, brown sugar, horseradish and a couple shakes of Worchesteir sauce. I don't really follow recipe here because it just depends on how you like them. I like mine spicy so I add extra horseradish sauce, but if you like them sweeter add more brown sugar, adding more ketchup makes them saucey, it just depend on how you like them. Just keep tasting and remember adding a little bit at a time and finding out you need more is easy to fix but if say you add too much mustard that is hard to correct, so just add a little and if you want more add it.

Some things that I personally cook are:
Baked chicken - either whole chicken or peices. Just spice them with whatever spices you want and bake them in the oven at 350.
Easy Spagetti: Brown some ground beef, add in a can of diced tomatoes and a couple jars/cans of spagetti sauce and simmer. Serve over pasta.
Meatloaf: mix ground beef, eggs, breadcrumbs, and a package of onion soup mix. Form into a loaf and bake at 350 until done.
Cole slaw: buy the packaged cole slaw (shredded cabbage and carrots) then mix some mayonaise with a splash of vinegar and a slash of milk. Pour that over the cole slaw stuff and mix it together.
Just keep in mind that cooking doesn't have to be complicated, some of the things people request here the most are the simplest things to cook. I have 15-20 people over for dinner every Saturday and Sunday.

Spicy Roast Chicken
1 Medium Chicken
3 TBSP. of Canola or Olive Oil
Cajun seasonings
Pinch of salt
Wash your chicken.
Rub Canola or Olive Oil all over the chicken so it wont dry out.
Sprinkle enough cajun seasonings that it covers the skin of the chicken. Then add a pinch of salt.
Bake in the oven at 350 degrees F. Bake for 2 and 1/4 hours.
Make a pear and apple salad
1 medium can of pears
2 chopped medium apples
squeeze of lemon juice
chopped pecans
a little whipped cream
spinach with melted cheese
boil fresh spinach leaves
sprinkle basil for taste
sprinkle salt for taste
after a hour of cooking 1 pound of spinach leaves drain the water out. Fill a large pot half to three-fourths full of water before boiling it.
Sprinkle mozzarella shreeded cheese on it. Bake it in the oven only 8 minutes at 350 degrees F.
Bake a potato for 45 minutes to an hour at 350 degrees F. depending on the size of the potato. Top with cheese whiz. Or top with something healthy like herbs , broccoli, basil, garlic.

i just moved out as well, so i understand the need for simple recipes as you may not have all the ingredients that you need to make an even slightly complex meal. here are some i've used that are relatively cheap and taste pretty good.
veggie quesadilla
2 tortilla shells
1/2 c. shredded cheese
4 Tbsp. salsa
1 oz. optional sweet onions/green peppers sliced.
put the tortilla on a pan on the stove medium heat, put the cheese then the other ingrediants on it.fold it in half, wait a couple minutes until the cheese is melted, flip.
tuna noodle cassarole
2 c. dry elbow noodles
1 can tuna
1 can campbell's cream of mushroom soup
1 c. frozen peas
boil water add noodles cook until al dente [look at instructions on box] drain water add soup, then tuna, then peas, let set for 10 minutes.
lemon pepper chicken
2 boneless skinless chicken breasts
4 Tbsp. lemon juice
1/2 c. water
ground pepper
pour water and lemon juice into a 3 inch deep pan. turn to medium heat add chicken breasts, cook covered until chicken is white on bottom side, flip over add pepper cook until chicken is done all the way through.
twice baked potatoes
4 large idaho potatoes
1 c. cheddar cheese
2/3 c. sour cream
seasoning salt
wash potatoes, remove eyes, poke holes in potatoes with a fork, put in microwave for 10 minutes. In a bowl mix sour cream, cheese, and seasoning salt. When potatoes are done stick a fork in them, if it goes all the way through easily it's done if not stick it in for another two minutes at a time until done. When done cut in half wait a couple minutes for them to cool a little, scoop out the majority of the potato add to sour cream mixture stir refill potatoes put on cookie sheet put in oven for another 10 minutes

Quick & Easy Salmon Cakes
1 (12-ounce) can pink salmon, undrained
1/3 cup diced onion
1 egg, lightly beaten
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 cups vegetable oil
Thoroughly drain salmon; reserve 2 tablesoons juice. In a medium bowl, flake salmon with a fork. Add reserved salmon juice, onion and egg; blend well. In a small bowl; combine flour and baking powder; gradually add to salmon mixture. Blend well. Evenly divide mixture into 4 to 6 balls. Pat balls into patties. In alarge skillet, heat oil to 350 degrees or until a drop of water sizzles when dropped into skillet. Fry patties on each side until golden brown. Remove from oil; drain on paper towels. Serve warm. May also be served on buns with tarter sauce, if desired.

1 Beef tenderloin
Preheat oven to 400F. Trim the beef tenderloin of fat and skin.
Cut the end and wrap the meat with 4 thin slices of
pork fat lenghwise.
In a large saute pan, heat the oil until very hot and
saute the meat on all sides.
Season with salt and black pepper. Let the meat brown slightly.
Place in the hot oven for 15 to 20 minutes for rare to medium.
(20 minutes if beef is hot 25 minutes if beef is room temperature.
See note Remove from oven and let rest at room temperature or
in a lukewarm place for 15 minutes before carving.
This is important to allow the juices concentrated in the
center to permiate all around the meat.

Okay, here ya go. Get a chicken cut into the prospective pieces. (And learn how to cut up a whole one soon, too. Cheaper, and you'll feel just like Julia Child.) In a baking pan, place the chicken along with 1/4 cup extra virgin olive oil, 1/3 cup good white wine (I recommend a wine that is good tasting and not made for cooking, as cooking wines add too much salt, and you'll have some left over to drink with dinner.) a pinch of salt and a good grind of black pepper. Toss the chicken pieces in the mixture until covered. Then add one unwaxed lemon (Meyers are nice) cut into chunks, one head of elephant garlic separated and peeled, and one small handful fresh thyme sprigs lightly bruised (squeeze in hand, you'll love the smell). Toss again lightly just to oil everything up nicely.
Then, preheat the oven to 400 deg. (Yes, that's right) Once heated, place pan in oven and cook for 1 hr. Then, toss pieces around to mix and reduce oven to 300 deg for second hour. When done, the chicken is perfumed and super tender, the lemons have started to caramelize and can be eaten plain (SO yummy), the garlic is roasted to perfection and tastes amazing, the thyme has added a tiny bit of smoky herbalness, and it will blow his mind. A perfect recreation of those southern French long cooked dishes, it even brings a bit of summer to the middle of January with it's great sunny aroma.
Make one of those bag kits of lentils and rice, or some buttered pasta for the side along with a green salad and there you have it!

Peanut Butter Cookies
1 egg
1 cup sugar
1 cup peanut butter
Stir together. Drop spoon full onto cookie sheet. Flatten with fork. Bake at 350 for about 15 minutes. More or less time depending on your desire for hardness of cookie. Allow to cool before removing from pan or they will break.

I've got so many!! Here's a few of my favorites.
1) Roast - Lightly flour your roast. In a large pot heat oil. Brown roast on all sides. Add 1 can Golden Mushroom soup, 1 can French Onion soup, 1 bag baby carrots, 1 onion, chopped, 1 rib celery, chopped. Simmer for 2 hours on low or until tender. Serve with mashed potatoes and green beans.
(for easy green bean casserole mix 2 cans green beans with 1 can cream of mushroom. Top with fried onions)
2) Nachos
Brown 1 1/2 lbs. ground beef in a large skillet. Add 1 onion, chopped, 1 bell pepper, chopped. Add 1 beef boullion cube, 2 TBS chili powder, salt and pepper to taste, cayenne (1/4 tsp), 2 cans tomato soup and 1 can refried beans. Simmer for about 20 minutes, stirring so it doesnt stick.
Serve with round nacho chips and top with cheese, sour cream, olives, whatever you like!

Mini Candy bar cupcakes
5 bars chocolate covered crispy candy bar
1 package white cake mix
1 1/4 cups water
1/3 cup veg oil
3 egg whites
1 tub chocolate frosting
350 oven
chop candy to equal 3/4 cup
in bowl mix together cake mix, water, veg oil, and egg whites. beat 2 min. beat in chopped candy at low speed. Fill your mini muffin cups
bake at least 13 minutes, cool five min, transfer to wire rack, cool completely, frost
chop rest of candy and top cupcakes
feed to boyfriend
