No, you don't have to, but I still think it wouldn't be of any harm to add it.

In formal letters you always have to add the date.

You don't have to write the date. The date is usually written to give a time frame on what you are discussing in the letter. If you put in the letter last night I went to the movies but you didn't write the date then how will anyone know what night you were talking about.

It you true you don't have to put a date on a letter but I believe it's a good document writing technique to add the date. Just think of how frustrating it is on the internet when you go to respond to something that has no date and is about 5 years old, I believe correspondence on the internet which is not business related-(like advertising) should be deleted after 2 years.

It's not the you "must" (you're not going to look rude if you don't) but in Italy we do.
Yuo should also add the place where you are when writing, for instance: New York, 5/8/2007
I used the Italian way (first day, then month), but it's just a choice.
But if you're writing to friends, relatives, g/f, it's better using the name of the month intead of a number. It will seem more "friendly".

I would, just in case it takes some time to get across seas....and even if for no other reason, a few years from now she can look back and remember the exact date that the letter was written.

Yes, post a date, unless there is something racy or provocative then don't use a date. The person may use it against you someday. People save letters you know and then can use them against you if there is a falling out.

Of course you don't HAVE to, but it's a good idea. If for some reason the letter is delayed, the date shows when it was written. Information can become outdated.

It is best that you do, so you can always refer back to that letter by stating the date.

I think it is a good idea. The date can make a difference as to what is going on at the time and helps you to see things in its context.
