This is more like pico de gallo, but it is excellent.
*Dice 5-8 tomatoes and place into a mixing bowl. (Use garden fresh, on-the-vine ripened tomatoes... go to a veggie market if you have to. THIS IS CRITICAL!!!)
*Dice 1 red onion and add to the bowl.
*Dice 1 jalepeno and add to the bowl (remove the seeds... this makes it hotter!)
*Chop 1/2 cup of cilantro (or more to taste) and add to the bowl.
*Roll a lime with your hand on the counter (this loosens up the juices!). Cut lime in half and squeeze juice into the bowl.
*Mix all the ingredients with a big spoon and place in the refrigerator.
You can control the heat factor with the number of tomatoes and jalepeno peppers that you use. It is really hard to mess this recipe up!

well, usually i use this salsa for meats that we bbq outside without bbq sauce. but it always works well with chips and eggs with refried beans in the morning. All you do is boil 3 red tomatoes prefferably the little oval shaped ones, and 2 fresh jalapenos with water just enough to cover them about an inch in the pot. when done put tomatoes and chilles in a different bowl transfering a little water with it mash with a (mocajete) a rock that we mexicans use. or a potatoe masher is fine. there will be some thick skins of both tomaotoe and chilles. thats okay just add salt to your taste and serve. You also can add more chilli of you want, because some days you buy them theyre hot and others are not. hope this works for you, its very easy

I recently made this salsa for a BBQ that I attended. Most of the people there thought I was crazy for making salsa with watermelon, but they loved it after they tried it.
Watermelon Salsa
2 cups chopped seedless watermelon
1 cup chopped fresh pineapple
1 cup chopped fresh mango
Juice from 4 fresh limes
1 cup chopped green onions
1/2 cup chopped fresh cilantro
1 small jalapeno pepper, seeded and diced
Salt and pepper to taste
Place all ingredients in a mixing bowl and toss to combine. Season with salt and pepper to taste just before serving.

the one I use is simple. Take 2 med. tomatoes ,diced. 1 onion,diced. about 1/4c minced cilantro. and as many hot peppers as you like. i use only one because i like mine mild.
