Pan? Why do I need a pan if I got a deep fat fryer?

I assume you mean in construction quality? Not what food might actually be in it at the time?

Well, I like a known-brand pan, with a good sturdy handle, that won't fall off after 3 months, and yeah, like the other guy said, self cleaning would be nice.

Other than that, I guess I look into a pan for a big hot vindaloo! But I'm often disappointed.

I look for the gauge of steel 18 or better, also lok for copper bottom (since I can't afford an all copper set) to have even cooking a through out. I also like a rivited/welded handle so a pan can be used in both oven as well as stove top.

Heavy base which will spread the heat evenly, means all of your food cooks at the same rate. And the strong handle suggested by a few others.

I guess first I pick the size and consider what I'll be cooking in it. Then I pick the finish I want for said food. Then I consider the weight. It has to be easy to sling around but not too light. It has to feel right in the hand.

OK, I guess I'm picky. :)

Yes, I agree and though I have problems with my hands I prefer them good and heavy - so you can use high heat! Non stick and one which is useable in the grill.

you have to go for a tefal one which is not stick and easy to clean and also the size where you can cook your english breakfast in it all at once apart from the beans lol

Same thing I look for in a bloke. durability, nice and weighty, firm handle.
