Well we have central air.... How the heck am I suppose to "recreate" these south Carolina temperatures so my new seedlings that came out of the fridge think it's spring time? Does the temperature REALLY matter indoors or just the amount of hours of light? (less light in spring, more in summer, ect" Any tips on this?

just forget about it. the baby seedlings dont need the rotation of seasons so far. they are not ready for winter hibernation this winter anyway, so you d better get them grow through their first winter by giving them 1. protection from scorching sun now, when they are tiny and 2. as much light as possible in the winter.

it is light that matters and especially winter light (not the difference between summer and spring)

. what matters about temperature is this: these plants grow in deforested land with plenty sunlight and humidity. therefore in winte on your window sill it gets many times less light. if the winter temperature is high it grows thin and sick. therefore it is a good idea to allow it as much light as possible, which means on window sill, not on your desk/table (you can roughly check the difference with you camera that tells you the aperture/shutter time) and much lower temperature than room temperature - protect it from receiving the central heating, let it get some of the colder air - poorly insulated windows are good for that..

in summer, scorching sun is dangerous, because it increases the temperature (use a thermometer) therefore decreases humidity. in the wild wetland the temperature is buffered by water evaporation, the air is humid, so you need a tank , box or bowl (partly closed) with with some moist moss to create damp air. for seedling i suggested plastic box with holes to allow some air circulation.
