for food and nutrition at school we need to come up with a chicken meal that can be cooked in 45mins
, and includes at least 3 veges (1 being green)
and starch (rice, pasta etc)
Some stir-fry recipies,
maybe teriyaki chicken? not sure?

Foil Chicken for the BBQ

Take a large piece of foil on it put a boneless, skinless breast of chicken. Add carrots, broccoli and potatoes. Season with salt and pepper to taste. Dried or fresh chopped onions and dried or fresh garlic. Fold foil over to make a envelope and the flip over add another sheet of foil to cover seam. Cook for 45 mins on grill. Let sit for 5 and eat

Chicken and biscuit pie

1 can cr of chicken soup
1 can swansons chicken
1 can peas and carrots (drained)
1 sm can mushrooms drained (optional)
salt and pepper to taste
2 T onions finely chopped
1 sm can (5) biscuits (the cheap ones bcs the others are to thick and don't cook all the way thru)

Preheat oven according to biscuits.
Mix all ingredients in a pot on top of the stove and cook until heated. Pour in a casserole dish and cut the biscuits twice and place on top and cook until the biscuits are done.
Great recipe if you don't have much time. About a half hour start to finish. You can double the recipe for more than 2 people.

My favorite Chicken Meal is Chicken Parmesan with Alfredo sauce on Spaghetti, I serve Green Beans and Carrots as the side vegetables.
To make the Chicken, I use Boeless Skinless Chicken Breast. I melt butter seasoned with Garlic Powder. For the breading, I crush Ritz Crackers and mix with Parmesan Cheese in about equal amounts. I dredge the Chicken in the Garlic Butter and then coat them with the Ritz/Parmesan Mixture and place the breasts in a baking dish. Because of the salt in the Ritz crackers, you do not need to salt the chicken. I cover the dish with foil and place in a preheated oven (Temp. 325 degrees) and cook covered for 20 to 25 minutes. While that is baking I prepare the Alfredo Sauce, I cheat and use McCormick's packaged Alfredo Sauce. I prepare 2 packets. After 25 minutes remove the chicken and pour half of the Alfredo Sauce over the Chicken, cover agian and cook for another 10 minutes. Then remove the foil and finish by baking another 10 minutes. It is extremely moist and juicy. Prepare your Spaghetti while the Chicken is cooking (I prefer Angel Hair Pasta). To serve, place Spaghetti on the plate with a little Alfredo Sauce on it and then place the Chicken Breast on top of the Spaghetti.
My two sides are Green Beans flavored with my favorite spice mixture, Cavender's Greek Seasoning.
I sautee onions and pimento in Olive Oil seasoned with the Greek Seasoning then I add a well drained can of French Cut Green Beans and sautee them in the onion/pimento until they are warmed.
My carrots, I boil slightly to soften them, but not too much, then I add them to a skillet in which I have melted butter and added Brown Sugar, Cinnamon and Paprika swirling the carrots around to coat them with the mixture.
As everyone knows color is good for a diet, having the White from the Chicken and Spaghetti with Alfredo, the Green mixted with the red from the pimentos and the orange from the carrots makes a beautiful presentation and covers the dietary needs of most all food groups. Of course, you would serve it with Garlic Bread.

Frozen boneless chicken breast...cook in microwave for about 10 minutes.
1 cup instant rice
1 cup chicken broth
finely chopped onion, celery & green peppers
s&p & garlic powder to taste.
Mix rice, broth, veggies and seasoning in glass casserole dish. Place partially cooked chicken on top and cover with foil. Cook for 25 or 30 min. in a 350 oven.
Make steamed broccoli.
Here's your 45 minute meal with 3 green veggies and onion. Good luck.

Make a marinade using olive oil, lemon juice, grated lemon rind, grated root ginger, salt, pepper and whatever herbs you have lying around. Mix all the marinade ingredients together. Butterfly 2 chicken fillets and place them in a shallow dish. Pour the marinade over the fillets, turning the meat so that it's all coated in the marinade. Leave in the fridge for half and hour and then pan fry the meat on a medium heat. Simple and delicious

Boil boneless skinless chicken breasts in seasoned chicken stock-remove and cut into chunks. Add chopped onion, carrots, celery and whole green beans to the stock-simmer 15 minutes. Add chopped chicken and noodles-continue simmering until noodles are cooked.
