There is Maine Lobster and there is Rock Lobster. Maine is more expensive, but tastes better.
To cook a whole lobster, you bring a soup pot of water to a boil, then once it's hot enough the lobster goes into the pot head first.
You can also use hot rocks in a pot as well. If it's not live, then you can bake them in the oven. Lobsters are done when they are bright red.

Red Lobster serves 2 types on a their regular menu. Maine and Rock lobsters. The Maine is usually more tender, sweeter and preferred by most people. The Maine lobsters are the ones sold live in their front tanks. The Rock lobster they use comes from the water off of South America and is more chewy and has less taste. Red Lobster also uses an Australian Rock Lobster during specials that is very tender and tasty. As for cooking, Red Lobster either steams or broils the lobster. Steaming results is a very tender tail.

You can cook it any number of ways. Most often, it is steamed or boiled, but you can also fry it, make it into a bisque and even throw it on your grill.
Most lobster is American lobster, unless you can get your hands on something special. As for the different types of lobster, I suspect your problem is that your are eating "Red Lobster" lobster.
Some restaurants pawn a variation of crab off as lobster. While I doubt the Red Lobster does that, the lack of fresh lobster available at your average chain restaurant is going to result in a wide range of quality from dish to dish.

there are Florida lobster and Maine lobster, you most likely had Maine lobster at Red Lobster. The one that tasted too sweet probably had something added to it or put on it to make it taste that way, as there is a minor taste difference between the lobsters, but not that noticeable.

Red Lobster uses Main Lobster. If you ever eat another type of lobster its probably local lobster (what we call in CA) which doesn't have the large claws. Local is more common in the western region, and more favored in ethnic cooking. Main lobster is more common in eastern foods and in commercialized restaurants.
