given to me from someones garden. They are small and I have several. I would like to make them like dill pickles. I want to can them. Any help would be greatly appreciated! Thanks!

I just made some today. Go to the store (in the canning section) and get a package of Kosher dill pickle mix. You will need white vinegar(5% acidity). Follow directions on pickle mix package. These are awsome. I have made them for years.

Pickles should be made from pickling cucumber varieties, not salad cucumbers. If you have pickling cucumbers, you need to remove some of the moisture in the cucumbers so that they will absorb flavor.

Boil some water with salt and turn the stove off. Put the cucumbers in this brine and soak for 4 hours. The cucumbers will now look like pickles.

Then you can put them into the brine for pickling. I just buy a jar of pickles, take out the pickles, and put my cucumbers in there. I keep it in the refrigerator, and they are ready to eat in two days. Crisp, perfect and delicious.

DILL PICKLES

4 lb. 4 inch pickling cucumbers
1/4 cup salt
2 3/4 cups Heinz distilled white vinegar
3 cups water
12-14 sprigs fresh dill weed
28 peppercorns

Wash cucumbers; cut in half lengthwise. Combine salt, vinegar and water; heat to boiling. Pack cucumbers into clean jars. Add 2 sprigs dill weed and 4 peppercorns to each jar. Pour vinegar solution over cucumbers to within 1/2 inch of top. Immediately adjust covers as jar manufacturer directs. Process 10 minutes in boiling-water bath.
Makes 6-7 pints.

HOT Pickled Cucumbers

2 cucumbers (peeled & thinly sliced)
1/2 cup lemon juice
1-1 1/2 tablespoon hot sauce (tapatio)
1/2 teaspoon salt
2 tablespoons vinegar, from jalapeno jar (optional)

Combine ingredients.
Let pickle for about 1-2 hours
