Carrots are not better than other fruits and veggies.
A healthy diet (5-10 servings of fruit and veggies, moderate protein, lots of complex carbs, low fat and low sugar) is good for the eyes and your health in general. Daily exercise, maintaining a healthy weight, adequate sleep and sunglasses outdoors help.
And the MOST important: don't smoke.

Milk. Drink lots of milk every day. Its full of important vitamins. Fruits and Vegetables are a good source of vitamins too! Vegetables like broccoli, cauliflower, brussels sprouts and carrots, and fruits such as apples, pears and oranges are very, very good for your eyes, and you should get in the habit of eating some of these every day. And if you don't think you like a particular vegetable, you should try at least two bites, one for each eye!

Vitamin A, but in small quantities. A small drop can give you a splitting headache.
Ultra-Violet Blocking Sunglasses.
Don't stare at the Sun, or fire.
Read in good indirect lighting.

wear glasses or contacts if you need them
take care of them when red and go to eye doctor
don't harm them by insisting on doing things that provoce allergy if you have any

Good lighting so your eyes dont strain.
Sleep at least 7-8 hours a night.
