The simple (plastic) ones have a slide where you put the coin. There is a handle on the slide which has the slot where you put the coin. the coin in the slot also engages an inner slide. With no coin the outer slide can move but not engage the inner slide. with the coin the inner slide is moved with the out slide. the inner slide consists of a disk that rotates on an axle that comes up from the base of the machine. The disk has a hole in it. when the disk/inner slide rotates (with a coin) the hole lines up with a second disk above. This second disk which does not rotate has a hole also. The two holes line up when the slides reach the end of their movement. There is a third disk the with a hole also. The third disk rotates with the first disk. This hole does NOT line up at the end of the the excursion. Rather when the gumball drops through the two holes (non moving disk, and the moving first disk) it is stopped by the third disk. As the slide returns (spring loaded) any further gumballs are stopped by the first moving disk blocking the top hole. As it returns to the beginning position a hole in the third disk releases the gumball to the slide. It falls down and stops at a little door and awaits to provide you with gustatory delight.

Couple things you can do.
One search for "wood gumball machine" there are a lot of diagrams on making them out of wood but they don't use coins.
Next search for repair manuals.
Last go down to the store and buy a cheap one take it a part.

Buy a miniature gumball machine from a local specialty store and take it apart.
We had (2) small ones (since given away) and they are not expensive.

I always want a red one and I usually get a white one. Maybe you should hang out with me when you want to get a piece of gum out of the gumball machine. I am sure I can get you a white one if you can get me a red one. LOL.
