Here is the requirement list from Adobe:

- Intel® Pentium® 4, Intel Centrino®, Intel Xeon®, or Intel Core™ Duo (or compatible) processor
- Microsoft® Windows® XP with Service Pack 2 or Windows Vista™ Home Premium, Business, Ultimate, or Enterprise (certified for 32-bit editions)
- 512MB of RAM
- 64MB of video RAM
- 1GB of available hard-disk space (additional free space required during installation)
- 1,024x768 monitor resolution with 16-bit video card
- DVD-ROM drive
- QuickTime 7 software required for multimedia features
- Internet or phone connection required for product activation

Note the DVD requirement. If your old PIII only has a CD drive, you can't even install CS3.

If you don't have the RAM and video RAM, in addition to the processor, then many of the features will run VERY slowly especially if you have large digital photo files.

I would not recommend doing it.

I run a 2.16 Ghz Core Duo with 2GB RAM and 512MB video RAM. I still wait for some things to process on large files.

It'll work but slow. The minimum requirements to run it smoothly is a Pentium 4, but if the speed on your PIII is pretty high it'll do.
