As many have explained, Canada, like the United states has many times zones, thus leading to a different variance in hours. In addition, some places in Canada (Saskatchewan) do not have DST (that's daylight savings time). Israel does.
Thus, if you want to figure out the time, know this:
Israel is +2 hours GMT with daylight savings (i.e. add one hour) from April until late September (early October).
If you wanted to find out from the EST (eastern standard time which is the time zone Toronto, Montreal, and most of Ontario is in) its -5 hours GMT, also with DST in the summer.
Thus, the variance between -5 and +2 is 7 hours. (But only for that time zone.)

It depends where in Canada. The furthest part East is 6 hours difference, the next is 7 (equivilant with Washington, D.C., New York, Florida, etc.) and so on. The further west you go, the more hours difference there are. Canada (and the U.S.) lie in multiple time zones.

What difference does it make? Go by Greenwich mean time and count backwards and fowards throught the time zones until you find the one in Canada that you are looking for.
