EASY VEGETABLE SOUP
1 lb. ground beef
1 clove minced garlic
1 c. sliced carrots
1/4 c. uncooked rice
3 1/2 c. water
1 tbsp. flaked parsley
1/4 tsp. dried basil
1 c. frozen green beans
1 c. chopped onion
15 oz. kidney beans
1 c. sliced celery
36 oz. stewed tomatoes
5 cubes beef bouillon
1 tsp. salt
1/8 tsp. pepper
Cooking time: 55 minutes. Cook ground beef, onion and garlic in a Dutch oven until browned, about 5 minutes; drain off fat. Add all other ingredients except green beans. Bring to a boil then reduce and simmer, covered, 40 minutes. Add green beans and cook 10 minutes more. Serve with toaster rolls - a delicious meal on a cold winter evening. Handy tip: if I have it on hand, I will substitute canned beef stock for water and bouillon.

Sure.
Get a big pot ready, add a little butter.
Add 2 big cans of stewed tomatoes. A can of green beans. A can of corn (sweet corn is the best I think). A bag of baby carrots. Peel and cut about 4 potatoes into bite sized bits. Put all of this into the big pot, add enough water to where the water goes over the top of the combined ingredients. If you prefer you can add half water half chicken stock.
I like to add a package of stew meat (it's beef cut into chunks) to the soup. You can get this at your grocery store.
Bring the soup to a boil, then let it simmer for a few hours on low. Season to taste. Good luck! :)

6 cups vegetable juice like V8
1 Bay leaf boil 5 min.
add
3 cups frozen mixed vegetables. Peas and carrots, corn broccoli. Whatever you like. bring back to boil.
1/2 teaspoon black pepper.
It's done
I am not vegetarian so I usually use half and half veg. juice and canned beef broth.
Add canned beans for a heartier soup with a little protein.
Fresh veg. are better but frozen is still very good.
Simple enough? Fast too. Served with a good bread and butter.

3 Celery stems diced.
3 Medium carrots diced.
1 Large onion diced.
1 Packet soup mix (split peas etc).
Additional vegetables
In a 10l stock pot add 2t cooking oil and add onion, celery and carrot and sauté for several minutes, stirring from time to time.
Add a jug of boiling water and the soup mix and stir
Reduce heat to a gentle simmer and leave for 90 minutes stirring from time to time.
Add more vegetables. Peas, beans, corn etc. (pasta spirals, elbow bow ties etc could be added, at this stage.
Season to taste with S & P etc and bring back up to heat.
