OK if you want the best potatoes you should boil them for 7 min in a little salted water and then mash them with a potato masher next add some cooked bacon and some butter and salt and plate it and finally grate some Cheddar cheese on top.

Slice new white potatoes quite thin after scrubbing, keeping the skins on, dip in egg, Italian bread crumbs and coat with a little olive oil, sprinkled with some Parmisian cheese. Bake til soft inside, crispy outside.

I love to whip some potatoes with milk, butter, and chili spice or curry spice.
I also like to mash them into a flat round shape, almost like a pizza crust. Sprinkle some cheese and onion on them and bake it.
A really good combination to use for appetizers is cucumber with a whipped potato topping. Don't laugh till you try it!

I assume you're looking for something more than boiled, baked, or fried?
Mine is a version of scalloped potatoes:
Slice peeled potatoes about 1/8" in thickness.
Slice mushrooms & onions about the same.
Place each in layers in a casserole dish.
Cover with a mixture of mushroom soup & water (or milk).
Cover with foil or lid & bake in oven for 45 minutes at 350F.
Remove cover & sprinkle with grated cheddar cheese.
Leave in for 5-10 minutes more until golden-browned.
Options (to dress it up):
Add kernal corn to the mushrooms & onions.
Combine toasted almonds with the cheddar.

I haven't found a bad way to cook a potato. I really love mashed potatoes and gravy, french fries and scalloped potatoes with lots of onions.

Chop into triangles about 1/2 thick. Leave skin on. Soak in warm water to let the insides soften for about 20 min. Pour 1/2 cup of veggie, hot chili or garlic oil in pan and add spuds carefully. After turning, add chopped 1 cup of red or sweet onions to saute'. After browning, add cajun or garlic seasoning.

I take the little red potatoes, cut them in half, roll them in melted butter, then sprinkle thyme on them and roast on a cookie sheet for about an hour at 400 degrees.
Super yum!
