Get them each a pair of tickets a baseball game or other sporting event, or a rock concert.
If you have your own website as a designer, maybe you can commemorate or thank them for their services publicly by showing the before and after photos of your award winning custom home, with permission from the owner of course, and credit them for their particular skill or service somehow.
You can take photos of the before and after, mount the photos in a frame or plaque, and present it to them for hanging in their offices.

Sending a thank you card is definitely the best way of saying thanks. Depending on how big a role they played in the project, a gift card may be seen as inappropriately small or impersonal. If you feel that a gift is definitely in order, take them all out somewhere. We have Dave & Buster's here, which is like Chuck E. Cheese for adults. The guys absolutely love it (so do I!). If you don't have that, take them to shoot some pool or do something fun. Chances are that an experience like that would be much more memorable than a gift or a gift card.

First, the best thing you can do to thank ANY co worker is to write a letter of thanks. If possible, on company or personal stationary so they can keep a copy of it for their records and future job searches should they need them.
Other gifts depend on the person. A person who is married would probably like a gift card to a nice restaurant that you think they would enjoy with their spouse. A single person may prefer a nice bottle of wine. Or you could gift either with a box of steaks (that is what we do for our company in several situations -- ordering them online through omaha steaks.)

Any kind of goodies in a gift basket. All men love their homemade sweets.
You can also take them out to a nice steak house or a nice restaurant in your area and pay for them (if you got along with them long enough to sit for a dinner) .
What about some nice wine for each of them?

If they like golf you could get them golf related presents. Or perhaps tickets to a sporting event. Or something that most guys seem to appreciate as a gift, a case of beer.

You already got some great suggestions but I agree with the Thank You note, detailing what areas the person was most helpful with, that they can save for future job reference.

You could make some cookies and put them in a nice little bag with a Thank You note.
It wouldn't be too over the top, but it would still be a nice thank you gift. Also, everyone likes homemade cookies! :)

Cookies...boys love cookies; most of them anyway. Get the really big home-baked type.
Unless you're looking to go bigger then get them a gift certificate to a local diner.

Do they like coffee/espresso? If so get them gift cards to Starbucks or a small stand nearby.

Wallets, watches, sunglasses and elegant or nice writing pen sets are always great gift ideas for men.
