Like whenever you hit black and white, it makes the whole picture black and white. I'd like to make on red (&And put 'Red Lights Indicate Doors are Secure . . .y'know that Arctic Monkeys song?)
I know it has something to do with saturation, but nothings working.

If you want to have part of your image B&W and others remain color as in the original, then using a layer is the way to do it.

1. Layer Menu -> Duplicate Layer. Click Okay in dialog box, default settings are fine.

2. Image Menu -> Adjustments -> Hue/Saturation

3. Slide the saturation slider all the way to the left. This makes the image B&W. Click Okay.

4. Select the Eraser tool and choose the best size and hardness. Now erase the B&W layer to show the color. You can also change the opacity of the eraser to reveal slight color from below.

There are other ways to do this that may give better results, but this is the most basic and easiest to try first.
