Chicken and Artichokes:

4 chicken breasts, skinless and boneless, 1 can artichoke hearts, drained (reserve liquid), 1 4oz container feta cheese, 1 T parsley, chopped, 1 T thyme, crushed, 1/2 cup white wine, salt and pepper. Season breasts with salt and pepper and brown in skillet. Place in baking pan. Chop artichoke hearts into quarters if they are whole and spoon over the chicken. Sprinkle with cheese and parsley. Add a little wine in bottom of the pan, cover and bake at 350 degrees for 45 minutes or until juices run clear. Mix wine with thyme and remaining artichoke brine. Heat over medium flame and bring to a boil. Season with salt and pepper and add 1 tsp dijon mustard. Simmer until sauce is reduced and spoon over chicken when it is finished. This is good with rice pilaf.

For gods sake, don't be one of those nuts that try to make creme brulee using skim milk. Just eat dessert less often, and eat smaller portions, but eat the real thing.

I assume your question is open to non dessert dishes. I recommend switching all of your pasta dishes to whole wheat, and eliminate the cream sauces. Eat tomato based sauces with your pasta. Bean salads are great for low cal. Cold lentil salad made with cooked lentils and tossed with a lime cumin/.garlic vinaigrette for example

Start eating whole wheat/whole grain bread instead of white and get brown rice instead of white.

Start grilling instead of frying your foods. Grilled chicken breast, shrimp, or skirt steak are great. The steak has more fat so just don't eat it as often.

Eat lots of fruit and raw vegetables like peppers, tomatoes, celery, carrots.

Switch sweet potatoes for your potatoes.

Stop drinking fruit juice (including orange juice), and eat the whole fruit instead.

If you do all of the above, you will start losing weight (which i assume is the point of your question)

A yogurt cloud made from your favorite low fat yogurt and any fruit you like blended or carrot salad with shredded carrots and raisins or just e-mail me and i'll get you ful recipes for dinner too

Pizza. Plain pizza with veggies is good...... Both ways!
(eating right, and tasting right.)

Or a reg. sandwitch, w/ no mayo or bacon or too much butter. Pile on the veggies!

(Plus a fruit like a bannana or an apple won't hurt once in a while. ;)

Banana Cream Pie

3/4 cup sugar
1/3 cup flour
1/4 tsp. salt
2 cups skim milk
3 egg whites or eggbeaters
1 tbsp. butter
1 tsp. vanilla
1 9" low fat piecrust
2 bananas, sliced
fat free whipped cream (optional)
fat free chocolate syrup (optional)

1. In a medium saucepan combine sugar, flour and salt.
2. Stir in 1 cup of milk, mix until smooth. Bring to a boil over medium heat, stirring constantly until smooth and thickened. Remove from heat.
3. In a bowl combine eggbeaters and the remaining cup of milk.
4. Slowly add egg mixture to the slightly cooled milk mixture and blend.
5. Return saucepan to the heat and bring to a boil, stirring constantly, lower heat and simmer until mixture thickens a bit more.
6. Remove from the heat and stir in butter and vanilla.
7. While mixture is cooling, spread sliced bananas to the bottom of the piecrust.
8. Pour mixture into the piecrust.
9. Cool completely and serve topped with fat free whipped topping.

They both are Perfect for your health. If you eat both, you're better off. But yea, I've choose fruits because they taste better.

It is determined by the fruit or plant associated with a comparison. In the event that you compare a n to a carrot, the carrot is the better of the two nutritional. When you compare an avocado to the carrot, then this avocado is better. Equally the apple and avocado, are fruits.

Greek Salad

Ingredients

1 lb tomatoes
6 oz vegetarian feta cheese
3 tbsp olive oil
salt and pepper
half a cucumber, peeled
10 black olives, halved
1 tbsp white wine vinegar
2 tbsp chopped marjoram

Method

1. Quarter the tomatoes, slice the cucumber and dice the cheese.

2. Place in a bowl with the rest of the ingredients and stir well.


A SUMMER BARBECUE

Spinach & Corn Salad
vegan
Freshly sprouted alfalfa beans make this an excellent fresh crunchy salad, perfect for alfresco dining.

Ingredients

350g/12oz fresh young spinach, washed and drained
1 head of chicory
175g/6oz baby sweetcorn
salt and freshly ground black pepper
50ml/2floz olive oil
1 clove garlic, crushed
15ml/1tbsp white wine vinegar
10ml/2tsp Dijon mustard
5ml/1tsp caster sugar
100g/4oz sprouted beans, eg alfalfa

Method

1. Remove any coarse stalks from the spinach and shred. Shred the chicory.

2. Halve the sweeteorn lengthways and cook in boiling salted water for 3 minutes, until just tender.
Drain and refresh under cold running water.

3. In a screw topped jar mix together the olive oil, garlic, wine vinegar, mustard and sugar. Season.

4. In a large salad bowl mix together the spinach, chicory, sweetcorn and sprouted beans.

5. Pour over the dressing, toss well and serve immediately.

Chinese Cabbage & Spinach

Serves 4

A delicious and colourful green salad with an unusual sweet and sour dressing.

Ingredients

½ largish Chinese cabbage (about 16oz / 450g) thinly sliced crosswise 4oz/100g young spinach leaves, washed, drained and chopped
1 pomegranate
Dressing

4floz / 100ml sunflower or other vegetable oil
2tbsp lemon juice
1tsp poppy seeds
1tsp cider vinegar
1tsp honey
Method

1 Combine the Chinese cabbage and spinach leaves in a bowl.

2 Cut the pomegranate and break out the seeds into the bowl, avoiding adding any of the bitter yellow skin.

3 Blend the dressing ingredients together until smooth and pour the dressing to taste over the ingredients in the bowl.

4 Toss well, turn the salad into a serving bowl and serve.

Green Lentil Salad

Serves 4

Ingredients

225g / 8oz green lentils
1 Friggs Sweet Pepper Stock Cube
1 bunch spring onions, chopped
2 large tomatoes, chopped
1 red pepper, sliced
2 tbsp chopped parsley
5 tbsp vinaigrette dressing
2 free range hard boiled eggs
1 lemon

Method

Pick over and rinse the lentils and place in a saucepan.

Dissolve the stock cube in water and pour over the lentils.

Bring them to the boil, reduce the heat, and cover and simmer for 30 minutes or until just tender.

Drain well and cool.
Meanwhile, add the spring onions, tomatoes, pepper and parsley to the cooled lentils.

Add the dressing, toss to mix thoroughly and pile into a salad dish lined with salad leaves.

Garnish with the hard boiled eggs and lemon wedges and serve with crusty bread.

Variation: use red or brown lentils, or a mixture of the two as red lentils tend to lose their shape too much for use in a salad.
