Honey Peach Jam
Ingredients:
1/4 tsp mace
1/2 tsp ground nutmeg
1 Tbsp cinnamon
1-1/2 tsp whole cloves
3 pounds fresh peaches, blanched, peeled, and puréed
2-1/2 cups raw honey
1/4 cup lemon juice
3/4 cup fresh orange juice
Instructions:
Tie the spices in a cheesecloth bag. Combine ingredients and simmer together until the mixture thickens. Remove the spices. Pour jam into hot, sterilized jars. Seal.

A fruity liqueur with a complementary flavor would make your peach preserves tastier. For example, apricot flavored brandy would be good. I'd prefer that to plain brandy myself. And any inexpensive bottle of apricot flavored brandy or schnapps would do. You don't need to know anything about liqueurs to select it and it should cost about $5 for a bottle.

You can use any liquor, or you can use an extract like vanilla or almond, etc. If you are worried about the alcohol content, it does cook off leaving only the flavor. But if you aren't a drinker, I guess you don't want that flavor, and you would be hard pressed to use up a bottle of booze purchased for the recipe.

Do you have other sweet alcohols in the house? I would suggest Cointreau, or any orange liqueur.
I'm assuming that it's a rather small quantity of brandy...a tablespoonful or two. If so, you can probably safely omit it.

yes, you can use juice, or brandy extract, or even the peach syrup in canned peaches.
