There are many ways to cook rice! Aside from just plain steaming or boiling in a rice cooker, you can use a pressure cooker, a casserole dish, or a saute pan. In general, you'll need two cups of liquid for every cup of dry grain. But there are exceptions to this, such as when you're making a soupy rice, like the Indian dessert, kheer, or Chinese jook/congee. You can also put it into a casserole, add water and the other ingredients, and bake it until all of the water is absorbed. Then there's the famous Spanish dish, paella, which is cooked in a huge, somewhat-shallow pot atop the stove. With all of these dishes, you add the water at the start of cooking and let the grain absorb it. But there is one rice dish that uses an entirely different method, and that's the Italian dish called risotto. (Rice pilaf is cooked somewhat similarly.) With risotto, you put the dry grains directly into the saute pan with some butter or other cooking oil, and you brown it. Then you add the cooking liquid, one ladle-full at a time, and stir it until the liquid is absorbed. You keep adding ladles-full, one at a time, until the rice has absorbed all of the liquid that it "wants" to absorb (you can tell when it's done, because it's tender when you taste-test it).

It should be:
5 cups uncooked calrose rice, rinsed
7-1/2 cups chicken/vegetable broth or salted water
cook covered 45 minutes - no peeking or the rice may cook unevenly.
You may want to borrow a rice cooker or 2 with a timer just to be sure it cooks evenly and does not burn.

One cup of uncooked rice makes three cups when cooked. Figure one cup per person you would have to have seven cups of uncooked rice with a spec left over. I would cook eight cup to make sure I had enough. You'll need a BIG kettle.

hmm well were a family of 4 and we have 12 dogs. We cook 4-5 cups of rice.You could estimate it from there....
