Back in the day, the ships want will receive new bulk of supplies of food at their home port. Depending on how much food they have left, they will try to make of conglomeration creation in which they use what they have the most of. Baked alaska was a great dessert that utilized alot of eggs and ice cream. Since then, it was a tradition to serve baked alaska at the end of the cruise.
