milanese sundried tomato risotto
SERVES 4
ingredients:
1 tbsp olive oil
25g/1oz butter
1 large onion-finely chopped
350g/12oz risotto rice - washed
about 15 strands of safron(maybe u cud get this from a spice
rack in a pot insted for ease?)
150ml/2/3cup white wine
850ml/1&1/2pints hot, vegetable (or chiken)stock
8 sundried tomatoes -cut into strips
100g/3&1/2oz frozen peas,defrosted
50g/1&3/4oz parma ham-shredded
75g/2&3/4oz parmesan cheese (ready made so already
sprinkles)or grated

* heat the oil and butter in a large frying pan.add the onion and cook for 4 - 5 mins.

*add the rice and safron 2 the frying pan, stirring well to coat the rice in the oil and cook for 1 min.

*add the wine &stock slowly to the rice mixture in the pan,a ladelful at a time, stirring and making sure that all the liquid is absorbed before adding the next ladelful of liquid.
*!about half way through adding the stock, stir in the tomatoes.

*when all of the wine and stock is incorperated, the rice should be cooked. test by tasting a grain - if its still crunchy add a little more water and continue cooking. it shoul take at least 15 mins 2 cook.

* stir in the peas, ham and cheese. cook fo 2 - 3 mins ,stirring, until hot. serve with extra parmesan.

needs constant watching.

hope this helps!!

I am not sure what you are really asking....

Do you want a chef?

Do you truly want to cook something?

If you live in the UK, you are unaware of foods that others eat? I distinctly remember eating Indian...

Are you asking for something easy to cook so that you can learn?

I would suggest a cookbook that focuses on techniques. One of the biggest mistakes I see is that people turn on a burner to high and attempt to brown something.... most people do not understand there are guidelines to cooking.... it is like driving a car. You can't just read a map, and start driving, you have to learn to drive a car!

Sure, I'd cook for money... but you'd have to promise not to complain if it wasn't to your liking...

Getting a take-away or taking him out to a restaurant is an excellent option! I'd go for that one... if you're desperate to put something together yourself, go for fresh pasta, and get a tin of ready sauce. You can add stuff like extra mushrooms and tomatos and olives to the sauce, even peppers if you chop them up finely enough, and you can actually cook them in the pan with the sauce itself. Other stuff may need cooking seperately before you add it to the sauce though, anything big like a potato for example.

Maybe get one of those ready made salads for a starter, and finish the meal off with ice cream or a fresh fruit salad.

Hope you have a good time!

Try my recipe for minestrone soup.

INGREDIENTS
210 ml vegetable stock
1/2 (14.5 ounce) can stewed tomatoes
1/4 large potato, cubed
1/4 onion, chopped
1/2 stalk celery, chopped
1/2 carrots, chopped
1/4 large head cabbage, finely chopped
2 g Italian seasoning
1/4 (15 ounce) can kidney beans
105 g fresh corn kernels
1/4 large zucchini, sliced
50 g uncooked orzo pasta
salt and pepper to taste
DIRECTIONS
In a large soup pot combine the vegetable stock, the undrained tomatoes, potato, onion, celery, carrot, cabbage and Italian seasoning. Bring to a boil and reduce heat. Simmer for about 15 minutes.
Stir in the beans, corn, zucchini and pasta; simmer for 10 to 15 more minutes until the vegetables are tender. Season with salt and pepper.

Go for salmon fillets and steamed veg - its so simple. Wrap the salmon loosely in foil with a splash of white wine, salt and pepper and steam or bake in the oven for about 20mins. Have with new potatoes (boil them in salt water until a sharp knife goes in easily, then serve them with a little butter) and steam some seasonal green veg. If you don't have a steamer, just cook them in a sieve or colander over the potato saucepan with the lid on top, but the green veg will only need about 5-10mins whereas the potatoes will need 15-20mins depending on size.

You might try contacting the local Senior Center ask if they have cooks that work for the elderly that would consider helping you.
Other than that phone the caterers.
