Scrummy roasted.
One duck approx. 2-21/5 kg. Remove excess fat from the cavity, stuff with apple segments and softened prunes. Tie it up. Prick the skin all over and rub with salt and pepper.
Place on a rack in a roasting tin in a cold oven, add some some chopped vegetables and water(stock) to the roasting tin. Set the thermostat to 160 degree celsius. Switch on and cook for three hours. Roast fot the first hour lying on it's breast. Rest of the time on it's back. Red cabbage and roast potatoes goes well with this dish. the juices make a delicous sauce.
N.B. The fat is excellent for frying eggs etc.

It tastes nothing at all like chicken or any other domestic fowl. duck tastes like "wild-fowl". It is probably the mildest taste of wild-fowl though. If you think of the taste of Pheasant or Partridge, it is slightly milder. It is a lot milder than Grouse. Apart from the taste, ducks don't have much meat on them, they are mainly fat. The breast is ok but the legs have next to no meat on them and the leg meat tends to get tough when cooking (overcooks easily). As a bonus, duck fat is good for roasting vegetables in.

If its roasted it rakes like chicken but if its fried its tastes like ham. Duck is considered game meat ( like: venison, bison, and kyote) and in less you were in a farmers market or butcher shop you didn't see duck. They don't sell duck in regular grocery stores. It's illegal... Grocery stores can only sell things that are fda approved it's federal law and one of the laws that No state is allowed to void out or ammend separately from the federal government. The only exception to this rule is fish. But even fish are some what regulated by the fda.

It has a quite rich gamey flavour, stronger than chicken or turkey.
there is usually a thick band of fat just bellow the skin which when roasted gives the meat a lovely flavour, but it can be quite dry so as a result if often served with a sauce, fruit based sauces go well (orange, cherry, plum etc)

I always get duck when I go to the Chinese restaurant by our home. It is so delicious the way they fry it, bake it, and the sauces they use are so tangy and delicious. My Husband forced me to try it and I have been hooked on it since.It is similar to chicken only it has a richer poultry taste and if cooked properly is juicy and succulent.

Depends on if it's wild or domestic.
Wild duck is very gamey, but lean.
Domestic duck is fattier, and has a milder flavor.
It really has it's own taste, it's hard to describe.

Oh boy!
What a succulent dish !!! It has a really high fat content on the skin, so if you cook it just right the meat is from another planet.
As recommended by others, a good starting point is crispy-duck pancakes. Amazing stuff.

Its hard to explain but yes it is similar to chicken and absolutely Delicious....it can be very fatty. Its hard to explain things like taste eg. What does a banana taste like? Try it it is great especially the ways the Chinese cook it.
