Most planned tours are a bit boring, and I would invite you to tour Hong Kong by yourself. The Metro can practically take you anywhere and is clean, safe, and reliable.

Things to do:
Wednesdays are free admission days at all museums in Hong Kong.
Every night on the bay at 8pm is the light show.
It has the world's longest escalator (800m), and that's fun as it runs past the market streets.
Most tourists go up the tram to Victoria Peak.
Hong Kong has also the world's largest Aquarium at Ocean Park. If you're willing to drop some money, the ticket is worth the full day entertainment, ranging from roller coasters and Giant Pandas to the aquarium and aquatic shows. Not to mention it has a fantastic view of Hong Kong.
If you have free time visit the places further away from the city or take a train.

For evening activities, grab the free Hong Kong newspaper about local activities, and find places where ladies drink free, DJs have a showdown, or if there is a special guest at a jazz bar. If in for more night life, hit up the bar districts.

Transportation
If you're arriving via airport, it is very easy to get an Octopus card. For 300HK you can get all rides in Hong Kong covered on this card, including two trips on the airport express. Or else the metro system in Hong Kong is by far the easiest in the world, and you can just purchase tickets.

Attractions:
Disney: though small but you can spend half day. Btw, the buffet is great
Ocean Park: Must go
Big Buddha in Lantau Island, but the cable car is not working. Sorry!!
Shopping: Mongkok: jewelleries, watches, electronics, fake stuff (woman's Street & Temple Street)
in Causeway Bay, Central(IFC), Pacific Place, you can find all luxuries brands in the world, LV, Gucci, Hermes.........
Food: too many Guangdong, Sichuan, Shanghaiese, Japanese, American, Modern European, Australian, Korean, Thai, Indoesian.....
